In the ‘Comet Year’ of 1811 and just 12 months after their nuptials, young newlyweds Pierre- Nicolas Perrier and Adèle Jouët created a Champagne House in Epernay through which their love story would continue throughout time. Today, from the same address and using the same buildings & cellars that the couple created, Perrier-Jouët continues to create enchanting, seductive and delicate Champagnes in the style created in unison by the founding couple.

Perrier Jouët Grand Brut glass £12 - bottle £65 - half bottle £35 - magnum £145 A blend of fifty different Crus, Perrier-Jouët Grand Brut expresses the quality and diversity of the House winemaking tradition. Its assemblage creates a balance between the consistency of the Perrier-Jouët style and the effects of the climate of the year. With 12 to 20% of reserve wines added, Perrier-Jouët Grand Brut is dominated by the elegance and finesse of the Chardonnay (20%) from the best vineyards in the Côte des Blancs. The delicate structure is brought by the Pinot Noir (40%) primarily sourced from the Montagne de Reims and the Vallée de la Marne, but also from the best Crus in the Aube region such as Les Riceys. Pinot Meunier (40%) from the Vallée de la Marne brings harmony, fruit and roundness to the wine.

Perrier Jouët Blason Rose bottle £85

The Cellar Master seeks ampleness and structure in this cuvée, in search of a gourmet blend which must nevertheless retain a certain freshness. A marriage which demands the precision of a specialist in order to bring out the elegance of style that is the hallmark of Perrier-Jouët champagne. The choice of Crus is carefully adjusted according to the harvest. An addition of 12 to 15% of reserve wines creates the consistency required to balance the Perrier-Jouët style with the climatic effects of the year. Built on the model of the Perrier- Jouët Grand Brut, which is driven by the intensity of the Chardonnay in the blend, Perrier- Jouët Blason Rosé is enriched by the addition of red wines. The elegance and finesse of the Chardonnay (25%), blend with the structure of the Pinot Noir (50% including the added red wines) and the fruitiness of Pinot Meunier (25%) – a grape with which Perrier-Jouët has acquired specific expertise.

character of the 2011 vintage. His blend brings out the freshness and elegance of the Chardonnay (50%) from the grands crus of Cramant and Avize. From the Montagne de Reims, the Pinot Noir (45%) display a generosity and delicate complexity that prolong the Chardonnay’s finesse. Finally, the rounded charm of the Pinot

It is aged on its less for 36 months – adding a creamy texture. The finish is long, with lingering notes of raspberry. Excellent as an aperitif or when paired with seafood.

A recently introduced pink champagne from one of the grandest of the Grandes Marques, Bollinger Rose is particularly fine, fruity &

full-flavoured. A subtle combination of structure, length and vivacity, with a tanic finish due to the adjunction of red wine.

Tim Frohlich was named recently winemaker by the Gault-Millau- German guide and winemaker of the year. His obsession for minerality has become the hallmark of Schafer-Frohlich wines. This Weissergunder (Pinot Blanc) is the perfect example. Zesty green-apple and crushed mineral tones on the nose extend into crisp lime and lemon on the palate, finishes with hint of smoke.

Edoardo, who was originally a textile manufacturer in his native Italy, settled on the micro-region of Elonovo, in the Eastern Thracian Valley, that was found to possess many similar soil and climatic characteristics to Burgundy. Luis Felipe Edwards Gran Reserva Merlot, Colchagua Valley This is an absolutely classic Chilean Merlot from some of the best vineyards. Big and bold, aged for about a year in a mixture of new and second use French oak barrels. Bursting with dark plum, cassis, bramble with vanilla and chocolate flavours on the end.

Good length, lightly honeyed on the back of the finish, creamy texture too.
