PRIVATE COOKING CLASSES

The cooking school at Haven’s Kitchen is devoted to teaching people how to cook using their own intuition and finding inspiration from fresh, seasonal produce.

Each class is structured to provide a hands-on experience in a warm and welcoming environment. Students are encouraged to ask questions and immerse themselves in the process of cooking. Our instructors have trained in various fields in the food and beverage industry—from holistic nutritionists

to former chefs at top New York City restaurants.

HANDS-ON COOKING CLASSES

Cooking classes take place in our teaching kitchen, which has the charm of a residential space and the functionality of a commercial space. White subway tile, marble and stainless steel combined with a warm antique farm table create a professional yet welcoming atmosphere. Depending on the group size and menu, students learn how to make three to six dishes in addition to fundamental skills and techniques.

Hands-on cooking for up to 12 students $2,500

MASTERING THE CLASSICS

Mastering the Classics focuses on teaching students the methods and techniques required to cook classic European dishes. Students may want to come with prerequisite knowledge of how to hold a knife and appreciate a good glass of wine, but it is not necessary. This class is structured around learning a single dish such as boeuf Bourguignon, coq au vin, bouillabaisse, sole meunière or osso buco.

SUGGESTED TOPICS

Classes reflect our mission to teach students how to prepare seasonal, sustainable food. We aim to demystify the process of cooking for those intimidated by the kitchen while also elevating the skills of advanced home cooks.

Menu structure is fixed and chosen to best compliment class content. Beverages are selected at the discretion of the chef. Menus are subject to change. If necessary, classes can be adjusted to accommodate dietary restrictions.

INTENSIVE KITCHEN BASICS

Intensive Kitchen Basics is our version of culinary boot camp. Depending on the class, students learn basic knife skills along with fundamental cooking techniques such as sauce-making, sautéing, frying and butchering.

Classes are focused on learning the preparation of dishes such as Steak Frites, Moules Frites, Chicken Pot Pie or Fried Chicken and Biscuits

Sample Menu: Steak with Compound Butters, Fries with Aioli, Market Salad

SIMPLE SEASONAL SUPPERS

Simple Seasonal Suppers best reflects our philosophy in the kitchen. Students learn how to cook with seasonal ingredients using their own skills, intuition and palate. In addition, students will learn about basic knife skills, equipment, pantry staples and recipes to get you started.

Sample Menu: Beet Pesto Crostini, Chicken and Biscuits with Kale, Roasted Root Vegetable Salad, Rustic Pear Tart FRESH SEASONAL PASTAS

Create a rustic Italian dinner by learning how to make fresh pasta dough—roll it, fill it, cut it and cook it. Prepare seasonal sauces and garnishes to complement each style of pasta. Students can request to learn how to make sausage as well.

Sample Menu: Acorn Squash and Ricotta Ravioli with Chili, Farfalle with Sausage and Seasonal Greens, Green Market Salad

MIDDLE EASTERN MEZE

Middle Eastern meze-style dining is a favorite at

Haven’s Kitchen because it features seasonal ingredients and an array of cooking styles that make for a fun, varied eating experience.

Sample Menu: Fattoush, Fried Tomatoes with Garlic, Tabbouleh, Babaganouj, Falafel, Hummus, Lamb Meatballs, Flatbread

1950s COCKTAIL PARTY

Throw a cocktail party that pays tribute to 1950s Betty Crocker- style canapés. Digging into historical menus, we’ve developed a class that includes vintage recipes with a modern spin. Dress-up recommended, but not required.

Sample Menu: Shrimp Cocktail, Oysters Rockefeller, Cheese Balls, Pigs in a Blanket, Carved Prime Rib Au Jus, Deviled Eggs, Vegetable Crudité

SEASONAL TAPAS

Create a spread inspired by the spices and ingredients from Spain.

Sample Menu: Boquerones with Pickled Peppers, Charred Scallions and Shishito Peppers, Fried Squash Blossoms with Smoked Ricotta, Fried Artichokes with Aioli, Gambas al Ajillo, Clams with Chorizo, Churros

EASY ENTERTAINING FOR LARGER GROUPS

For larger groups, we have a curriculum offering called “Easy Entertaining” to provide a hands-on experience for everyone. Groups will be split into two teams: one team works in the kitchen creating a festive spread for a cocktail party while the other half learns how to make cocktails to complement the food. At the end, the two teams will gather in the dining room to showcase and enjoy their accomplishments. Guests can find inspiration for their curriculum from different parts of the globe—a Middle Eastern meze, pinchos from Spain or a 1950s cocktail party.

COCKTAIL CLASSES

Like our cooking classes, our cocktail classes are designed to be entirely hands-on. Students learn essential bartending skills by making three to four cocktails. Light snacks are included with the price. Maximum capacity is 12.

COCKTAILS 101

Want to know the difference between shaken and stirred drinks? Do you love cocktails when the pros make them but can’t seem to recreate them at home? Cocktails 101 is geared towards the beginner bartender. Instructors will start you at zero and get you up and humming in no time. You’ll make and discuss classic cocktails, fail-safe ratios used by the pros, and essentials to stock your home bar.

COCKTAILS INSPIRED BY THE GREENMARKET

We love a good cocktail just about as much as we love the arrival of spring. Why not combine the two into a perfect class for the season? In this class, learn how to make drinks using ingredients from the greenmarket.

ALL ABOUT SOURS

According to Punch, one of our favorite reads for all things beverage, sours are a direct descendant of punch. The basic recipe is a spirit, citrus and a sweetener, but sours have endless variations from the well-known whiskey sour to the tropical daiquiri. Sours are an industry favorite—offering a refreshing, puckering pop. Students will learn how to make three different types of sours.

DEMONSTRATION-BASED CLASSES

Haven’s Kitchen also offers a range of

extracurricular course options that teach students about tasting wines, the language of cheese, the terroir of chocolate, flower arranging, food styling and more. Depending on the number of guests, these can be hosted on the second and third floor of our space and can be added to any class or event for additional programmatic fees.

PRICING SUMMARY

Base pricing includes food, beverage, instruction staff and space rental for up to three hours. Classes are non-taxable and gratuity is included. Additional programmatic and overages expenses may apply.
