MANAGEMENT REPORT
The 2020/21 financial year was one marked by many challenges for our clubs, our members, our people and our community. In contrast to 2020 when the COVID-19 pandemic impacted the last financial quarter, almost the entire 20/21 financial year was spent operating under some form of restriction. Ongoing capacity restrictions were lifted in March 2021 after being in place for 10 months, only to be reinstated in May, before the second shutdown in as many years was enacted on 26 June 2021.
It’s difficult to recall a moment when the ongoing threat of the pandemic to our way of life and our way of doing business has not been present over the past 12 months. However, that hasn’t stopped us from working together to deliver on our mission of making a difference.
This leads me to a point that makes me extraordinarily proud.
Under some of the most demanding circumstances, with continuously moving goal posts, developing and implementing new operational procedures and ongoing revisions to public health orders, our team did not flinch. Together we rose to the challenge to provide first class experiences for our members. We continued to innovate, continued to learn and support each other and continued to develop and explore new services and products to expand our offering.
I am pleased to present an operating profit for the ICC Group for the year ended 30 June of $12,335,677 including income tax of
$1,578,176, donations of $751,845 and depreciation of $5,064,701.
The continued patronage of members and guests, and the loyalty shown during such an uncertain and challenging year is something that we are very grateful for.
SUPPORTING OUR MEMBERS AND THE COMMUNITY Over the past 12 months, I have witnessed first-hand the impact that we can have as an organisation. Through our ongoing Corporate Social Responsibility program, we provided $751,845 in financial grants and sponsorships to local charities, community groups, sporting clubs and not-for-profits. We continued to focus on our priority areas of domestic violence support services, education for children and young people and the health and wellbeing of our communities.
Our financial support has ranged from a $90,000 cash grant to the St George Cancer Care Centre to purchase chemotherapy dentistry chairs for people receiving treatment for cancer in the neck, jaw and head, through to providing $1,000 to the Narrangy- Booris Child and Family Health clinic in Menai to support local Aboriginal families with tracking the growth, development and wellbeing of their children.
I am particularly proud of a new partnership that was established this year with St George & Sutherland Medical Research
Foundation (SSMRF). Club Central has committed to a major strategic partnership with SSMRF worth $360,000 over three years to support community health education as well as a broad range of research to improve health care, treatments, and patient outcomes. The research is conducted in the St George
& Sutherland Hospitals which will directly benefit local residents,
including our members.
ABOUTCORPORATE SOCIAL RESPONSIBILITYGOVERNANCEFINANCIAL REPORTS
As well as these significant financial investments, I am also proud of some of the other acts of charity made possible with the contributions of our members. These included collecting donations of new and pre-loved items for babies and children to Dandelion Support Network, donations of non-perishable food for St Vincent de Paul Christmas hampers and $2111 donated to the Charlie Teo Foundation thanks to patrons purchasing Cadbury fundraising chocolates during brain cancer awareness month in May.
Support for local grassroot sport is always an important focus for Club Central, and perhaps even more so in a year when being able to connect through healthy sporting activity took on even greater meaning. We provided $151,000 in financial grants to 33 local sporting clubs as well as $11,372 of in-kind support by providing free room hire for committee meetings.
Our membership figures for the year point to a community which values our presence. Membership for the 2020/21 financial year totalled 52,848, including 17 Life Members, 83 Honorary Members and 1,272 Perpetual Members. We thank every one of our members for their loyalty and continued support. Despite the challenges presented by social distancing rules and restrictions on gatherings, we were very proud to provide over $435,000 in promotional prizes to members throughout the year as well as birthday vouchers, rewards club points and a host of other member benefits.
CHANGING OF THE GUARD
After 28 years of service to Illawarra Catholic Club our Chief Financial Officer, Tim Hilder announced his intention to retire and explore more of Australia in his Nissan 4WD. We were delighted to appoint Colleen Perry, who has served as the Group Finance Manager for more than 13 years, as Tim’s successor.
Tim’s long tenure with the business is testament to his
commitment to our ongoing strength and success. We wish him all the best in his retirement, and warmly congratulate Colleen on her appointment.
CONTINUOUS IMPROVEMENTS
Despite the challenges of operating within COVID restrictions, our focus on continuous improvement remained at the forefront.
Our team adapted to new ways of working in order to meet the requirements of the public health orders and maintain our high levels of customer service.
Among many new improvements, we rolled out a new point of sale system to provide improved service, our re-brand and new uniform was launched on 1 September to an overwhelmingly positive response, we installed new TV screens throughout both venues and took our ever-popular Christmas raffles online so that COVID capacity restrictions didn’t impact our members wanting to enter. These are just a few achievements in a busy year, more of which can be found in the Year in Review on pages 24 and 27.
Our project to construct a new Travelodge Hotel, expanded function centre, new bistro and rooftop restaurant and bar at Hurstville continued to progress throughout the year. We’ve welcomed several new team members and are continuing to
work through the process of conceptualising and bringing to life our new offerings. We expect to create more than 80 new local jobs once the project is completed which will result in a 50%
expansion of our workforce by the time we are fully operational in early 2022. The ability to do this is in no small way due to the continued loyalty and patronage of members over the past 12 months.
SUPPORTING OUR PEOPLE
Supporting our valuable team through the ups and downs over the past 12 months has been one of our main priorities.
As the COVID restrictions continued to ease across the state in the second half of 2020, we continued our commitment to offer re-employment to all staff that had been stood down during the 70-day closure period.
In addition, we provided Mental Health First Aid training to our entire Duty Manager and Human Resources teams to ensure that there was always someone our team could turn to when in need.
Although restrictions prevented us from holding our normal end of year team celebrations, we were pleased to be able to gather in early 2021 to shake off the stress of the previous year, celebrate our successes and look ahead to what, at the time, we hoped would be a more normal year in 2021.
I would very much like to thank our employees for their continued loyalty, patience and support during a challenging time for the hospitality sector. It truly proved to me that we are stronger together.
WHAT LIES AHEAD
Despite the short-term uncertainty at the time of writing this report, we remain optimistic about the future of our business.
Thanks to the Board’s long-term diversification strategy, the ICC is in a strong financial position.
We know our Clubs play an important role at the heart of the communities we are part of. We continue to make significant investments into our venues to ensure they remain relevant, inviting and welcoming to members.
As our way of showing our appreciation for our members’ support in an unimaginably challenging year, we’ve worked tirelessly to care for each of our stakeholders, protect our business and ensure that we can continue to make a difference.
I’m confident we have the right foundations in place for a successful recovery and continued growth into the future. It’s clear that there is no overnight fix to a global pandemic, however as vaccination rates improve, we will be ready to welcome our members and guests with open arms.
PAUL RICHARDSON
Chief Executive Officer
PRESIDENT’S REPORT
It’s a pleasure to present to you the Annual Report and Financial Statements for Illawarra Catholic Clubs as at 30 June 2021.
The COVID-19 pandemic continues to have a significant impact on our lives and livelihoods. Despite our hopes for a less tumultuous year in 2021, to date we have not been able to escape considerable impacts from health orders, ongoing capacity restrictions as well as the ripple effect on the wider community.
Despite such challenges being ever present, I am very pleased to report that the ICC returned a profit of $12,335,677 including income tax of $1,578,176, donations of $751,845 and depreciation of
$5,064,701.
I congratulate the Senior Leadership Team, led by Chief Executive Officer, Paul Richardson for these results. My congratulations also extend to our frontline and administration teams who embody our Clubs’ values and deliver such exceptional service with a smile to our patrons.
The Board is cognisant of the need to maintain high standards of corporate governance, accountability and due diligence across all aspects of our operations. I’m proud to report that these principles are present in the way our team operates our business every day.
GIVING BACK TO OUR COMMUNITY
Despite ongoing operational challenges brought about by the COVID-19 pandemic, I am extremely proud that we have been able to provide support for organisations that are vital to the welfare of our local communities.
Donations totalling $751,845 were made to the Georges River and Menai areas (1 September 2020 to 31 August 2021). This included
$151,000 in financial grants to local sporting clubs across Menai and Georges River to assist them in continuing to provide an important sporting outlet to the community. Finally, we provided
$66,826 in in-kind support to local community groups and not- for-profits through room hire waivers, dining vouchers and event services.
SUPPORTING OUR MEMBERS
Whilst our industry is hospitality, our purpose is our members. The Board’s decision-making process is always focused on ensuring the long-term stability and success of our clubs, so that we can remain present and relevant to our loyal members.
Whilst the changes and restrictions that the whole world has been forced to adapt to have not always been easy to come to terms with, it has been heartening to hear and see our members doing what they can to support our team serving them. Working together to follow the health advice and abiding by health orders is a display of mutual respect. If the past 18 months of living with this pandemic has reminded us of anything, it is that we are all humans who need each other’s support, to not only survive, but to thrive.
My sincere sympathies are extended to all of those who lost loved
ones over the past 12 months, including the relatives and friends
of our members. May they rest in peace. Mourning the loss of
a loved one is difficult at any time, but perhaps even more so
ABOUTCORPORATE SOCIAL RESPONSIBILITYGOVERNANCEFINANCIAL REPORTS
when there are health orders restricting the number of people who can support you. It is always an honour when a member or a member’s family chooses our clubs to hold the celebration of their loved one’s life and something that we endeavour to make as stress-free and special as possible no matter what restrictions may be in place.
OUR BUSINESS PERFORMANCE
Once again, Club Central Hurstville was the leading contributor to our profitability, primarily through gaming.
At Hurstville, Imperial Dynasty continued to offer a popular choice for yum cha and a la carte dining, and we were also pleased to welcome Niji Sushi to the club in November 2020, providing members with another delicious dining option.
As we look ahead to the completion of our expansion project at Hurstville, we are excited with the progress that’s been made over the past 12 months. Some elements of this expansion have already been opened to members, most recently the Stone Bar and Lounge which was completed not long before the June shutdown, as well as an expanded gaming lounge.
Club Central Menai continues to be a community hub for local gatherings and through the Terrace Bistro & Cafe, with Richard and Myriam Facer, provides appetising meals for lunch, dinner or a simple coffee and cake with friends.
With large scale gatherings one of the last elements to return to pre-COVID operations prior to the second lockdown, our functions business at both venues has been significantly impacted. At Hurstville, our function rooms were progressively closed in the fourth quarter to allow exciting refurbishment works to be completed. Even so, our functions team continued to innovate and adapt to the changing rules to ensure that our members were able to celebrate as soon as it was allowed.
Out of an abundance of caution around protecting the health and safety of members and our team, some of our marketing promotions were slow to return following the reopening in 2020.
However, our team was able to find new ways to help members enjoy themselves with a new Mahjong tournament at Club Central Hurstville introduced in February 2021, as well as several dinner and show events at Menai which were hugely popular with members looking for a fun night out after a long absence.
YOUR BOARD IS HERE TO SERVE YOU
More than any time in recent history, this year has thrown many challenges at us all. I would like to take this opportunity to acknowledge and personally thank the Directors for their strong leadership, compassion and expertise which has helped chart a course through testing circumstances.
It was particularly wonderful to see Director of 13 years, Sandra Coogan, celebrate 50 years of membership in August 2020. This example of commitment and connection to Club Central is so valued and something that all Board members attest to.
Whilst many decisions about the short-term future for our clubs were required throughout the year due to the ongoing period of change we are all living through, the strong working relationship
between the Board and the Senior Leadership Team made this a harmonious process.

CONCLUSION
It’s with a sense of hopefulness that I conclude my report this year. As I write, we continue to be faced with some difficult circumstances, however none that I believe we can’t overcome.
Even with the adversity that we have all faced together, I know that you will remain proud to hold membership with our clubs as we continue to care for our members, our people, our environment and our community.
Clubs are much more than places to get a drink or enjoy a meal. They bring communities together to share in a common interest or purpose. We provide a warm, welcoming environment, encourage community participation, volunteering and finding a purpose outside of ourselves.
As we approach the 60th anniversary of the formation of Illawarra Catholic Club in 2022, I think that the founding Directors would be proud of how our clubs have weathered those 60 years. There have been challenges to overcome in the past, and there will surely be more to come in the future. What is virtually guaranteed however is that your clubs are here to support you.
We look forward to enjoying our 60th anniversary celebrations, which will also be a time to celebrate coming out of a period of harsh lockdowns, separation and isolation. I know I speak on behalf of my fellow Directors when I say that we can’t wait to see our members enjoying their clubs once again.

HUMAN DIGNITY
We recognise people’s sense of worth, values and self-esteem. We treat people with respect and dignity regardless of their

ACCOUNTABILITY
Every employee is equally responsible for the success of the club. We can be relied upon to consistently deliver and provide great service by holding ourselves and

OUR
PEOPLE
Our employees are our greatest asset and the cornerstone of our business. Quite simply, a great team helps ensure that our members have a positive experience with us. Our 2020 Employees of the Year were Ashleigh Lockton (Hurstville) and Jordan Turner (Menai).
MENTAL HEALTH FIRST AID
Our core strength comes from the diverse backgrounds and experience of our staff who each bring their own individual talents. In any given year, we recognise that our team will face and overcome challenging periods and interactions. Facing a global pandemic and riding the wave of ongoing changes and disruptions to our way of doing business has had an enormous impact on our team and we recognised they needed additional support.
In December 2020, we provided Mental Health First Aid training with the assistance of award-winning International Speaker, Author and Workplace Mental Health Consultant, Anna Feringa.
This training was provided to our Duty Manager team to equip them with the skills and tools to support their colleagues.
TRAINING & EDUCATION
Club Central prides itself on an extensive training program that sees all new starters provided with nine separate training modules, regardless of prior experience. We believe this ensures that our members receive consistent and high-quality service every time they visit us. In addition, our Human Resources department also holds mandatory annual re-orientation sessions to refresh the team on all aspects of their roles.
Other training opportunities available to staff include traineeships with a Certificate III in Hospitality, First Aid and Food Safety Supervisor training.
STAFF DEVELOPMENT
In addition to a focus on training, we look to provide opportunities for our team to broaden their knowledge and have some fun at the same time. Over the past 12 months we provided the following opportunities for development over and above our standard training program:
• An exclusive education session with the experts from Four Pillars Gin at the Surry Hills Observatory Gin Lab
• Bar champions were identified and offered in-house cocktail training
• In collaboration with Fever Tree Tonic, we provided an in- house session to educate and upskill staff on premium mixers
• An exclusive wine tasting dinner with Estate Winery to increase knowledge on our expanding wine list
• Training on the new point of sale system, InfinitePOS, which is
paperless and provides a better customer experience

OUR
MEMBERS
We value all of our members, and many of our team form strong bonds with them. In an otherwise difficult year, we have enjoyed some special moments of celebration with our fantastic members.
GOLDEN ANNIVERSARY FOR CLUB CENTRAL’S FIRST FEMALE DIRECTOR Sandra Coogan’s memories of the
Illawarra Catholic Club stretch back to 1962, when she would regularly accompany her mother and aunt to bingo on Thursday evenings at Regent’s Hall. She’s still a regular visitor to Club Central Hurstville and Menai and an Illawarra Catholic Club Director. On 3 August 2020, Sandra celebrated 50 years of Club membership.
When she joined the Illawarra Catholic Club in 1970, she was one of 29,790 members. Today she is one of over 54,000.
Over the years much has changed, but Sandra says that our lovely staff have always gone above and beyond to make members feel welcome and special.
CLUB CONNECTION TRACED BACK THROUGH THREE GENERATIONS The Northmore family connection to Club Central and Illawarra Catholic Club stretches back through three generations, to a time before the Club opened its doors in Diments Way, Hurstville in 1962.
In recognition of the ongoing family connection and to celebrate Brian Northmore’s 80th birthday on 9 October 2020, the Club Central Board presented club membership badge number 2 to Brian, the badge number originally held by his father Tom.
Tom Northmore was involved in establishing the Illawarra Catholic Club, becoming one of the founding Directors.
Following in his father’s footsteps, Brian worked at the Club in Hurstville from the day it opened in Crofts Avenue until the move to Woodville Street. He often came straight from a day at the printing business to work a night shift as a drinks waiter at the Club. The third generation of the Northmore family, Mark Northmore, also worked at the Club at Hurstville during his accountancy studies.
After many years working at Club Central Hurstville, Brian and his wife Anne are now regulars at Club Central Menai and are well known to our fantastic team.
60,000 REASONS TO CELEBRATE On 25 September 2020, we welcomed our 60,000th Club Central member - Yi Wen!
Yi Wen is from Surry Hills and is 85 years young. She was welcomed to the Club Central family by Illawarra Catholic Club Director, Phil Stanton.
We were so happy to celebrate this special
milestone with Yi Wen and gave her a
pack of Club Central merchandise and
a voucher. 2020 was such a challenging
year, and seeing our membership reach
60,000 demonstrated the continuing
support of our members.

CO-EXISTING WITH COVID-19
Whilst our venues started the 2020/21 financial year having been reopen for a month, there was a feeling of déjà vu in June 2021 with lockdown orders closing our doors on 26 June.
RESTRICTIONS COME AND GO…AND COME AGAIN
From 7 December 2020, in response to lower case numbers, the NSW Government relaxed restrictions on clubs with density limits in venues moving to 1 person per 2 sqm instead of 4 sqm. One of the most exciting changes announced in December was that up to 50 people were allowed on dance floors at any one time.
Unfortunately, the relaxation of public health orders was short- lived with the NSW Government reimposing restrictions on hospitality venues on 20 December 2020 in response to the Northern Beaches COVID cluster.
This meant a return to capacity caps, no dancing at clubs and singing and performing was prohibited. From 2 January 2021, the NSW Government introduced a further requirement that face masks were mandatory for all hospitality staff as well as patrons using gaming services.
In late January 2021, restrictions were again relaxed and the requirement for face masks to be worn by customer-facing staff and patrons in gaming areas was also lifted. Restrictions on dancing and singing remained in place.
WE’RE STILL STANDING
In March 2021, in response to lower case numbers the NSW Government allowed a return to standing whilst drinking. This restriction had been in place for just under 10 months across hospitality venues and was a very welcome reprieve for our team who, for a few weeks, did not have to ask patrons to sit down and enjoy their drinks.
Later in March, the NSW Government enabled a return to almost normal operating conditions for clubs, including the reintroduction of dance floors as well as 100% capacity for seated indoor events and entertainment.
FULL CIRCLE TO ANOTHER LOCKDOWN
In response to a case of community transmission in early May, the NSW Government reimposed restrictions on 6 May 2021 including mandatory mask wearing, no standing while drinking and prohibiting dancing and singing.
These measures remained in place and on 23 June the 1 person
per 4 sqm density limit was reintroduced. On Saturday 26 June
the NSW Government announced that Greater Sydney would be
subjected to stay-at-home orders with clubs required to close at
6pm the same day.

RESPONSIBLE GAMING
Against the backdrop of COVID-19, we worked hard to innovate and adapt our gaming offerings at each venue to create a safer environment for our members and guests. Ensuring adequate social distancing was paramount as well as a renewed focus on our patrons’ wellbeing which has translated across all areas of the clubs’ operations.
The Club Central team ensures that assistance is provided to anyone that requires help or support in managing their time spent in the Club. Club Central has strived to provide a responsible gaming offering that is safe and minimises harm. Key initiatives include:
RESPONSIBLE CONDUCT OF GAMING
• Foundation and Platinum ClubSAFE member, which is a responsible gambling and compliance program that provides engagement with regulatory agencies and customer oriented responsible gambling practices
• In August 2020, the Club Central Board reviewed our loyalty program ahead of new ClubsNSW guidelines
• Club Central joined National Association for Gambling Studies, which focuses on responsible gambling research
• There were 26 proactive staff interventions where staff approached patrons to provide assistance under the responsible conduct of gambling in the 2020/21 financial year
• In March 2021, Club Central management completed a two- day ClubSAFE Advanced Responsible Conduct of Gambling Training course developed by the University of Sydney Gambling Treatment and Research Clinic
ANTI-MONEY LAUNDERING
• An independent review of Club Central’s anti-money
laundering program by PKF determined the Club’s risk
assessment and programs to be fully compliant with all
requirements under the AML/CTF Act.

HURSTVILLE PROJECT
PROJECT MILESTONES
In a year of continual change, one constant was our project to extend and refurbish our Hurstville premises. It has been a project that our team and members have watched with much excitement as the building has continued to rise out of the ground and gradually take on its own identity.
Located at the centre of Hurstville’s bustling commercial core the project includes a new brasserie with outdoor terrace, expanded function centre with 600 seat capacity, an extension of the indoor and alfresco gaming and lounge areas, five storey underground parking and new administration and retail space.
The 124-room Travelodge Hotel will be a first for the Hurstville area, positioned on top of the expanded club premises on Cross Street on levels 4 to 8 with a central atrium. Conveniently situated close to the airport, city and all local medical facilities it will support the local visitor economy, including guests with business and conference needs.
NEW RECEPTION & ENTRY
After reopening in June 2020, our grand new reception and entry was unveiled soon after. With an elegant jade green stone reception desk stretching along the wall and metal detailing in the lighting feature above, as well as large format tiles, a streamlined check in kiosk area and new screens, it provides a warm and welcoming sense of calm on entry to the Club.
STONE BAR & LOUNGE
In September 2020, we unveiled the new heart at the centre of our gaming and entertainment spaces - Stone Bar & Lounge. A cream marble with streaks of amber and charcoal surrounds the bar and is combined with timber panelling for a modern, but classic appearance.
TOPPING OUT
In November 2020, we reached an important project milestone
with a ‘topping out’ ceremony taking place on our new build
site. Members of the ICC Board, senior leadership team and
construction and project management teams gathering to
celebrate the completion of the structural phase the project and
our building officially reaching its highest point.

LEVEL 2 PROGRESS
May and June proved to be very busy periods in the refurbishment of our existing club spaces. We also began to get a sense of the new spaces which are getting closer to completion. New carpet was laid throughout level 2 providing a plush feel underfoot and a more modern look. The extensions to our gaming floor were also completed with many new comfort features added for members’
enjoyment.
FUNCTION ROOM PROGRESS Much progress has also been made on the level 3 function rooms, which are undergoing a massive facelift as well as almost doubling in size.
The new panelling and soft finishings on the walls lend a sophisticated, elegant feel to the spaces.
NEW STONE BAR FURNITURE
In June 2020, we took delivery of the new lounges and tables in Stone Bar and Lounge, providing new spaces for our members to relax. The combination of the navy and copper velvet lounges and industrial era wrought iron and glass shelving provide a warm, relaxed space for members and guests to explore. The Lounge space will lead through to the future family-friendly brasserie still under construction.
STILL TO COME
Much more is still to be
unveiled, with our members
and team looking forward to
exploring the new spaces. The
project to transform Arena Bar
will be complete in October
2021. Overall, the completion of
our project is estimated to be
late December 2021.

PARTNERING TO MAKE A DIFFERENCE
The challenges of 2020 highlighted the vital nature of medical research to the global population. In addition to life threatening illnesses such as COVID-19, there are many other diseases and illnesses that deserve focus through medical research to improve everyday life for many Australians.
In late 2020, Club Central began discussions with St George & Sutherland Medical Research Foundation to explore how our organisations could work together to support the health and wellbeing of our communities. In early 2021, Club Central established a partnership and pledged a 3-year Major Strategic Partnership worth $360,000 with SSMRF. Our financial and in-kind support will fund a series of community health events as well as a
broad range of research to improve health care, treatments and patient outcomes.
The partnership was kicked off at the launch of the Red for Research campaign in June, with the launch event held at Club Central Hurstville. Some of the other initiatives we will be supporting include the Beachside Dash, the St George Cricket Annual Charity Walk, community education sessions as well as direct financial support for research.
Not only does this three-year partnership provide vital education to our community it will also help champion local research and build capacity in our local hospital network.
As well as large scale projects and programs to provide community support, Club Central also supports many local, grassroots programs that make a difference to the local Menai and Hurstville communities
