Financial Members are invited

to confirm the minutes of the previous annual general meeting

to receive and consider—

(i) the annual report of the Committee on the activities

of the Association during the preceding

financial year; and

(ii) the audited financial statements of the Association for

the preceding financial year

to elect the members of the Committee;

to confirm or vary the amounts of the annual subscription and joining

fee.

Strawberry Tabouli

Ingr edient s

 1 cup quinoa  1 ½ cup water

 desired amount of strawberries  2 cups finely diced cucumber  ¼ of a red onion, very finely diced  1 cup fresh mint- chopped ( or cilantro)  1 cup Italian parsley chopped

 4 tbl olive oil

 1 tbl red wine vinegar  2–3 tbl fresh lemon juice  1/2 tsp salt, plus more to taste  fresh cracked pepper to taste

Optional additions: feta, goat cheese crum-bles, toasted pistachios, toasted almonds.

Instructions

 Rinse quinoa & drain.

 In a medium pot add 1 ½ cups water & quinoa. Bring to a boil. Cover, turn heat down to low & cook for 15 mins. Turn heat off, leave cov-ered 5 more mins. Fluff & chill quinoa. (You could do this ahead & re-frigerate overnight)

 Place quinoa in a large bowl. Add in finely diced strawberries, cucum-ber, red onion, mint & parsley. Gently toss.

 Pour in olive oil, red wine vinegar, lemon juice, salt & pepper & mix.

 For extra heartiness, add feta or goat cheese crumbles & toast-ed pistachios or slivered almonds. Enjoy!!
