The projecT and parTners

The Chianti Classico certified DOP olive oil and the Chianti area catering industry forms a partnership creating a km “0” project which aims to promote Gallo Nero food and wine products along with their territory of production.

Thanks to the collaboration of the Chianti Classico Oil Consortium, the municipality and its leading food and wine businesses, the Castellina restaurants have joined this project in favour of DOP olive oil produced by local farms.

United in what can be defined “pact”, not only for having chosen quality above all, the project partners are working together to directly communicate a clear message to their customers.

The “big” olive oils are always difficult to make and to be acquainted with; from this awareness comes the idea, from those who still believe in good things made properly, to unite and to support one another.

Just as those who love good food and carefully choose their restaurants, so do those who prefer a certified quality oil, definitely healthier, choose DOP; requesting it at restaurants, searching for it on shop shelves or buying it, not only to be repaid with the best quality product, but also assisting a productive system which is based on full respect of the consumer.

This business venture, born together with others under the communitary project (PIF) called “Chianti Classico DOP Gold”, for contents and objectives falls within the actions of the “Terre di Siena Green Lable” promoted by the Provincial Administration of Siena, mainly for the short production chain aspect dedicated to the promotion and sustenance of local production.

WhaT is chianTi classico dop olive oil?

The origins of Chianti Classico DOP lie in the very land of Tuscany, in the area between Florence and Siena, among the municipalities of Castellina, Gaiole, Greve e Radda in Chianti and part of Barberino Val d’Elsa, Castelnuovo Berardenga, Poggibonsi, San Casciano Val di Pesa e Tavarnelle Val di Pesa.

Chianti Classico DOP olive oil is more than just an extra virgin olive oil; it improves, exalts and compliments the flavours of every dish.

It is The Condiment, with a capital C, the liquid expression of the flavours and aromas of the fruit of the land in which it grows and ripens.

It is the “creation” of hundreds of producers who, for generations, have worked in a territory which has a natural predisposition for olive growing.

This huge historic, geographical and human heritage is today at the service of Chianti Classico DOP (Protected Designation of Origin).

hoW do We Make chianTi classico dop olive oil?

In order to guarantee the highest level of quality to consumers, the Chianti Classico DOP olive oil production manual must be strictly respected, throughout all procedures and production stages, from the initial olive harvest to the cold pressing.

WhaT are The characTerisTics of dop olive oil?

This olive oil comes from a territory which faces harsh winters and extremely hot and dry summers. The olives are, therefore, unable to reach full ripening and their oil takes on an intense flavour of olives mixed with fresh grass and artichoke.

Every time the olive oil is bottled, the producer must carry out chemical and organoleptic tests to establish if the characteristics described in the manual have been fully satisfied.

From the organoleptic point of view (aroma and flavour) DOP olive oil must be deep green in colour, with shades of gold and its flavour must be fruity, green, bitter and spicy.

stRengths

The Stiaccini family, owners of the Antica trattoria La Torre, started their business around 1860.

Gaspero, head of the family at the time, was a “treccone” (grocer). He used to buy and sell goods directly to and from the farmers while running a small shop in Via Ferruccio 72.

In 1922 Carlo, known as Bega, moved the business out of the narrow rooms of the bottega into a larger building which would subsequently become the current Antica Trattoria La Torre.

Among our customers, worth mentioning are some famous people, such as Ottone Rosai, Princess Anne of England, Sir Londonderry, Federico Fellini, Roberto Benigni, Bud Spencer, Horst Tappert and also politicians such as Willi Brandt, Amintore Fanfani, Oscar Luigi Scalfaro e Luciano Lama.
