Cookware

Cookware is referred to in many styles and materials; however the basic styles and designs have remained the same over many years. The common round shape is designed to suit all cooktop heating sources and also ensures easy stirring and mixing with no corners which is ideal for cooking.

They are then designed around form and function using the body as the starting point and then applying the lids and handles to suit.

The basic body shapes and uses are in this booklet and are associated with all cookware regardless of brand.

When choosing cookware, match the pan to suit the cooking style. The shape and dimensions make all the difference in getting the best results. There are some KEY cookware essentials that cover your everyday cooking needs, others are dedicated to perfectly performing a single task. The best 4 must haves

Saucepan

Number one cooking vessel, the saucepan has multiple uses, from making sauces to cooking vegetables, rice and heating soups.Normally available from 14cm to 20cm sizes to suit your family cooking needs.

Casserole (or referred to as Dutch oven in some brands)

Ideal for soups and casseroles.

Designed for use on cooktops and oven. Normally 24cm (4 – 5L capacity) size is most common, a casserole is slightly lower with less capacity than a stockpot to enable it to be used from cooktop to oven. Prepare everything from tender meats to savory stews and soups.

Frypan

Ideal for fast cooking, searing and frying.

The 26cm size is the most common however they are available from 16cm to 32cm.

Larger size frypans will have a helper handle on the other side to aid with handling the frypan as well as to counter balance the long handle.

Milkpan

Normally 14cm in size is the most common, ideal for heating milk and sauces with most having a drip less pouring lip.

Saute pan

A sauté pan is designed for searing and browning foods over relatively high heat. Sautéing is a method of cooking food that uses a small amount of fat in a shallow pan over relatively high heat. Ingredients are usually cut into pieces or thinly sliced to facilitate fast cooking. Food that is sautéed is browned while preserving its texture, moisture and flavor.

Multi cooker

Use this versatile combination of pot and inserts for

everything from steaming vegetables to cooking pasta. It can also double as a stockpot for making your favorite casseroles and soups.

Oven / Multi-Pan

It’s a casserole and sauté pan in one, this pan design offers even more flexibility by allowing you to use it from cooktop to oven to table with ease. It’s great for browning and then slow-cooking.

Wok

Ideal for Asian stir frying, but can also be used many other ways, such as in steaming, deep frying, braising, stewing, smoking, or making soup.

The wok’s most distinguishing feature is its shape with flared edge that makes it easier to push food up onto the sides of the wok. The flat bottom makes them more flexible to use for deep frying pan. The flat bottom allows the wok to be used on all cooktops.

Universal Steamer

Designed for steaming your favorite vegetables for a fresh and healthy meal. Universal steamers are designed to fit 16,18 and 20cm saucepans.

Stir fry

Same uses as the wok however the stir fry is normally made with a long handle usually welded or riveted to the wok body.

The handle enables you to use a tossing action for quick stir fry cooking. Larger size stir fry pans will have a helper handle on the other side to aid with handling the wok as well as to counter balance the long handle.

Materials used for Cookware

Stainless Steel

Stainless steel is most commonly used for saucepans, casseroles and stockpots as it is an extremely versatile material. It is design to not pit or corrode and will not react with acidic or alkaline ingredients. It is easy clean and normally will last a life time of use. Stainless steel however doesn’t conduct heat, it is a great retainer of heat once the vessel is heated. Nearly all stainless steel cookware uses a combination of matreials. Usually a stainless steel body and a aluminum or copper encapsulated core creating the ideal cooking vessel

Higher quality stainless steel cookware will often have an impact bonded base to give the best possible attachment of the internal aluminium core and stainless steel protector to the body of the pan. This allows the Aluminium to spread to the edges of the pan, for efficient and rapid heat transfer giving you even cooking and eliminating hot spots to prevent burning in the pans interior corners. Cookware with impact bonded bases are highly durable and suitable for all cooktops including induction.Oven safe and dishwasher safe.

Materials used for Cookware

Stainless Steel

As a guide the following stainless steels are being used for cookware globally.

18/8 stainless steel – 8% nickel 18 % chromium content

18/10 stainless steel- 8-10% nickel content 18 % chromium content As a guide the above are basically the same and are the highest quality available for stainless steel cookware. The higher nickel content the better as this ensures a (whiter) brighter finish, higher rust resistance with less pitting which is due to the materials stablising.

The chromium content is normally the same across most stainless steel cookware brands, this is used to prevent rusting. Nearly all cookware made using 18/8 stainless steel is referred to as 18/10.

18/4 stainless steel – 4 % nickel –17 -18 % chromium content NTK D11 stainless steel – 3.5-5.5 % nickel –17 -18 % chromium content.

18/4 material has been used more for cookware in the past few years, this is due to the extremely high raw material pricing of Nickel. It is slightly less rust resistant than 18/8 however the finish and performance are very similar.

D11 is relatively new for cookware but is a little better than 18/4 due to the higher nickel content. There are also other stainess steel new to the market such as NCCS 180 and CT21 which also have very similar working properties to 18/4 and NTK D11.

18/2 stainless steel –1 -2 % nickel – 16 -18 % chromium content Normally used for lower end cookware. It has a lower nickel and chromium content than both 18/8 and 18/4 meaning it has less rust resistance.

18/0 stainless steel

18/0 is most commonly used for the base of encapsulated

cookware. The reason this is used is to ensure there is a magnetized base so the cookware can be used for all cooktops including

induction. The down side to 18/0 is the fact it can be duller due to no nickel content.

Stainless Steel

Tri-Ply Construction

Different types of metal can be bonded together, The multi layer, permanently bonded construction

with outer layers of stainless steel combined with triple bonded layers of aluminium produces exceptional cooking results.

The major benefit of this construction is that the heat transfer is conducted all the way up the side walls of the cooking vessel, eliminating hot spots throughout the complete interior of the cooking vessel, instead of just on the base, as with conventional stainless steel cookware. This style of cookware also eliminates overheating in the bottom corners of your cookware due to its consistent wall construction. The stainless steel/aluminium construction material is extremely durable and is normally polished internally and externally to assist cleaning and also to give this cookware a brilliant finish. This cookware will provide you the unique attributes that only belong to tri ply construction which is normally only found on higher priced cookware.

Materials used for Cookware

Hard Anodised

Normally used for frypans, woks and roasters due to the high, quick heat transfer. Hard Anodised is normally pressed with the highest quality aluminium and treated to create a tough anodised body. An Electro-chemical process is used which increases the thickness of natural oxide film in aluminum, to give it a hard non-oxidizing finish which is more durable than ordinary aluminium and twice as hard as stainless steel.

Heat is distributed from the base to the sides, providing efficient and rapid heat transfer giving you even cooking and eliminating hot spots to prevent burning in the pans interior corners. Added to this is the fact that when a non stick surface is applied to Hard Anodised products it has even better durability and easy clean use.

Baccarat Hard Anodised cookware has an added stainless steel induction plate on the base of the cookware to give greater strength and making each item suitable for all cooktops including induction.

Note: Not all Hard Anodised Cookware feature a exterior coating. If this is not added the hard anodised cookware CAN NOT be used in a dishwasher as the exterior will oxidise or have a whiting on the exterior.

Materials used for Cookware

Aluminium

Nearly always associated to frypans, woks and roasters. The exterior is normally painted and the interior is always made with a non stick coating . Aluminum cookware can be formed either by pressing or by casting. Most aluminum cookware on the market today is formed by pressing. Casting of aluminum is a slower and more expensive process, however the end result is that the body is generally thicker than pressed aluminum, and the bottom and the rims can be made even thicker than the sidewalls, which helps prevent warping or going “out of round”. Cast aluminum is also more porous than pressed aluminum, which results in better heat retention.

When polished or coated, it is difficult to visually tell the difference between pressed or cast aluminum. Aluminium bodies will give exceptional heat transfer from the base of the vessel and up the side walls to give you more energy efficient cooking!

Materials used for Cookware

Cast Iron

Cast iron cooking utensils have been with us for thousands of years, going back to ancient China.

Today’s cast iron cookware has been improved over the past few years and is now available in more shapes grades than ever before. They are made of iron alloys that give additional strength to the vessel. Normally they are painted inside and out with porcelain enamel finishes.

Cast iron is currently used for cookware including skillets, roasters and Dutch ovens, broilers, griddles, and some specialty items. These items are ideal for browning, frying, stewing and baking foods.

Carbon Steel

Carbon steel cookware is normally pressed into shape, while still maintaining high strength and heat resistance.It is normally made for woks, stir fry pans and paella pans due to the rapid and high heat. Carbon steel however does not conduct heat as well as other materials, this can be advantage for woks and paella pans, where one portion of the pan is intentionally kept at a different temperature than the rest. There are many styles of carbon steel but the most common is non stick coated which is designed for easy clean and rust resistance. This is because carbon steel can rust very easily. In some cases they are natural carbon steel meaning there is no coating and the pan must be seasoned before use. Carbon steel is used on Bakeware due the light weight and inexpressiveness of the material. They are nearly always covered inside and with various on stick coatings which vary from brand to brand. The quality of bakeware is normally associated to the non stick coating and if it has high food release after baking.

Interior Coatings Used For Cookware

Non Stick Coatings

Coatings used in the cookware industry are made from either a silicone base or a fluorocarbon (P.T.F.E.) base. Fluorocarbon coatings are applied in a 1,2 or 3 coat process, consisting of 1 or 2 layers of the non-stick material, plus a “sealer” or topcoat. This is the process generally used on interior coating.

The main differences in quality levels are in the formulas of the non stick coating, the number of layers of coating, and the thickness of each layer.

“Generic” or non-branded coatings are generally used on low end frypans, and will usually be a formula that has less durability and release qualities than branded coatings.

Interior Coatings Used For Cookware

Gauges

In the cookware industry, cookware is usually refered to millimeters. The Higher the millimeters or thickness (in most case) the better the quality.

Aluminum is normally from 2mm to 5mm with the majority being between 3mm to 4mm in thickness. The higher thickness the better the quality with less chances of warping.

Stainless steel cookware is normally from 0.6 mm for bodies and lids in lower price points and 0.7mm to 1mm in the higher quality brands.

Nearly all cookware has an aluminum sandwich bottom, the aluminum is usually 3.0 mm thick for lower price points, 4mm to 5mm for higher quality brands. They nearly all have a 0.5 mm stainless steel protector plate.

In the case of a copper sandwich bottomed cookware, the copper thickness will vary from 1.0 mm to 2.0 mm, depending on the brand.

Selecting the right cookware

When buying cookware always look for well-balanced pots and pans that are heavy enough to prevent denting or warping. Also keep in mind to purchase the right product for the right cooking style. Ensure the handles are comfortable and strong enough to support and move easily. Check to make sure the handles are attached securely, either with rivets or sturdy screws. Always check the lids too, be sure they fit snugly and have knobs or handles that are large and easy to grip.

The best indications of good quality cookware is the price.

Were possible you should always try to buy the best cookware you can afford. Cheaper made pots and pans can under perform and have a reduced life. Buying good cookware makes sense as the right cookware can last for a lifetime of use.

Using Your Cookware

Q. Can stainless steel cookware be used on glass-ceramic cooktops ? A. Yes as most cookware is made with a flat-bottom which will remain flat (won’t warp) throughout cooking.

Please note: when using on induction ,ceramic and halogen cooktops, always life the item in an upright direction to avoid damaging your cooktop. Never drag or slide cookware when removing from the cooktop.

Q. Can all cookware be used on induction cooktops ?

A. No .The base must be magnetic for the cookware to work. Always refer to the packaging to ensure the base has a magnetic plate which is normally made in 18/0 stainless steel.All aluminum and hard anodised cookware is not safe for induction unless it has the induction plate.

Q. Can cookware be used under a griller

A. No .Only cookware with out non stick coatings should be used under a griller as the direct flame will affect the non stick coating and reduce the life of the product.

Q. What is heat stress or tinting?

A. Heat stress or tinting is a mottled rainbow (bluish colour) -like discoloration on stainless steel that is caused by excessive heat. Heat tint can usually be removed with a commercial stainless steel cleaner.

Q. What is the right way to use the cookware on cooktop.

A. ALWAYS USE a heat source smaller than the diameter of the cookware base, this is to ensure you are getting the most efficient

cooking performance from your cookware.Never leave an empty saucepan or frypan on a hot burner or element. Avoid leaving your cookware on a burner unattended for long periods of time. When cooking, always try to use the lowest heat possible.

Q. Are all handles stay cool

A. Even “staycool” handles may heat up, as stainless steel is a conductor of heat. The term “stay cool” is a reference to the length of time it takes for the handle to heat under normal cooking conditions. To minimise overheating of handles and knobs, the heat source should not exceed the diameter of the saucepan base. As a safety measure, it is recommended to lift stainless steel handles and knobs with a suitable pot holder. These can be purchased through various

kitchenware retailers.

Q. Can I put salt into cold water

A. No. If using salt, only add once the water has began to boil as adding salt to cold water may cause pitting in your cookware.

Non- Stick Coating

Q. Is there a health hazard in using pans with a nonstick finish?

A. No. Nothing has been confirmed that these coatings are not safe for human use. However you should always use low to medium heat settings when using non stick coating.

Q What special instructions should be followed when cooking or frying with nonstick coated cookware?

A. Medium and low heats should be used. Preheat the pan for about one and one-half minutes over medium low or medium heat. Then add food and turn the heat lower. (Many meats are first browned on both sides over medium heat; then the heat is reduced to finish cooking.) High temperatures cause food residues to burn on, affecting the non-stick characteristics. High heat should only be used for searing

over very short periods of time.

Q What should be done before using a pan coated with a nonstick finish?

A. Before using, wash your cookware in warm, soapy water then rinse and dry thoroughly. To help preserve the non-stick surface and ensure the best performance from your cookware, we recommend

to periodically apply a few drops of cooking oil into the interior surface of the pan.

DO NOT use spray on oils, spraying oils have an ultra thin layer of oil that will burn off at low temperatures and can leave a sticky residue that reduces the non-stick properties of your cookware.

Q. Can I use metal utensils?

A. For stainless steel cookware with no non stick coatings this is fine however caution should always be used to avoid deep scratching. For any non stick coated cookware we recommended to only use wooden or nylon utensils however it is safe to use metal utensils on some non stick coatings this would be stated on the packaing.

Q. Can top of range cookware also be used in the oven?

A. Cookware with phenolic (heat-resistant plastic) handles and knobs and/or with nonstick interior coatings may generally be used in a pre- heated oven up to 350 degrees F. (180 degrees Celsius) but should not be used under the oven griller. Cookware with 100% metal handles can be used in the oven up to 500 degrees F. (260 degrees Celsius), if it has a non stick interior it should not be used under the griller. Cookware with wooden handles and knobs may not be recommended for oven use.

Check the manufacturer’s instructions before using top of range cookware in the oven.

Problem Solving

Q. My stainless steel saucepan has some “white spots” on the base.

What has caused this?

Cooking certain starchy foods - such as rice potatoes or pasta - may cause a stain on the inside of the pan. This can be removed by rubbing with a sponge dipped in lemon juice or vinegar or with a good stainless steel cleaner. We advise that you bring your water to a boil before adding food. This will help prevent this “white spotting”.

Q. Can I remove “pitting” on the inside of my saucepan?

Undissolved salt will “pit” steel surfaces. Add salt to liquid after it reaches boiling point and stir well to dissolve it completely. You may try some stainless steel cleaner.

To remove stubborn stains, dried or burnt on food, partially fill the cookware with three parts water to one part detergent or vinegar and bring to the boil. Turn off the heat source and set aside for a period to cool and allow these stains or deposits to soften; then wash in mild dishwashing detergent and warm water using a non abrasive mesh pad or a soft brush.

Q. What causes aluminum to discolor? Can discoloration be removed?

A. In some heavier minerals and alkalines in water can be deposited on the rim surface of aluminum pans, causing some discoloration. This does not affect the use of the cookware or the food prepared in it. Stains or discolorations that may appear on aluminum cookware can be removed by boiling a solution of two to three tablespoons of lemon juice or vinegar to 1lt of water for five to ten minutes. Then scour lightly with a soap-filled scouring pad.

Q. Can extreme temperature variations cause cookware to warp?

A. Yes . After cooking DO NOT immerse your hot pan in cold water as this may result in irreversible warping. Always Let the pan cool to room temperature before cleaning.

Q. What is causing the bluey tinge in my stainless steel cookware?

A. Bluish iridescent markings are the result of minerals in food and/or heat settings which are too high. They will vanish if treated with lemon juice or vinegar. If staining is more persistent please try some Stainless Steel Cleaner. Do not allow acid or salty foods to remain in stainless steel for long periods of time.

Q.How should I clean any stains on the outside of my stainless steel cookware?

A. To avoid tough stains building up on the exterior of your pans, clean thoroughly after each use. Use plenty of hot soapy water. Most stains are caused by oil or grease and are further “cooked on” each time the pan is reheated, making them more difficult to remove. You can also use a stainless steel/ copper cleaner and a non-abrasive pad.

Q. Can I soak my pan immediately after cooking?

A. No. Please allow your pan to cool down to room temperature before cleaning. This will prevent warpage and grease splattering.

Q. Is cookware dishwasher safe

A. Yes most stainless steel cookware is dishwasher safe. However most hard anodised cookware is not, always check the products packaging.

When using in a dishwasher water spots may be left due to the high temperature produced from your dishwashers drying cycle. To avoid water spots, remove cookware from your dishwasher before the drying cycle and dry with a soft towel. To help prolong the life of any cookware we do recommended hand wash only.

Q What is the right way to position iD3 cookware on a cooktop?

A. When cooking on an electric or gas cooktop always use a heat source smaller than the diamter of the cookware base. When using an induction cooktop always use an element slightly larger than the base of the cookware. (This is the only instance is the only instance we will recommend this. This is to ensureyou ae gettting the most effecient cooking performance from your cookware.)

Q Are all handles stay cool?

A. Yes. However over extended cooking time, stainless steel handles, even “staycool” may heat up, as stainless steel is a conductor of heat.

The term “stay cool” is a reference to the length of time it takes for the handle to heat under normal cooking conditions. To minimise overheating of handles and knobs, the heat source should not exceed the diameter of the saucepan base, except for when using on an induction cooktop. As a safety measure, it is recommended to lift stainless steel handles and knobs with a suitable pot holder.

Q Can iD3 Hard Anodised stainless steel cookware be used on glass- ceramic cooktops?

A. Yes as the cookware is made with a flat-bottom which will remain flat (won’t warp) throughout cooking

Q Can all cookware be used on induction cooktops?

A. No. The base must be magnetic or have a specifically designed induction plate for the cookware to work

The Baccarat iD3 range have been made specifically for use on induction cooktops (excluding the iD3 griddle)

Q Can iD3 cookware be used under a griller?

A. We do not recommend placing D3 items under the griller. In all cases only cookware with out non stick coatings should be used under a griller as the direct flame will affect the non stick coating and reduce the life of the product

Q Can extreme temperature variations cause cookware to warp?

A. Yes, After cooking DO NOT immerse your hot pan in cold water as this may result in irreversible warping. Always let the pan cool to room temperature before cleaning

Q How do I care for the ceramix coating?

A. We recommend to periodically apply a few drops of cooking oil onto the surface of the pan. DO NOT use spray on oils, spray on oils have an ultra thin layer of oil that will burn off at low temperatures and can leave a sticky residue that reduces the non-stick properties of your cookware.

Medium to low heats should be used for general everyday cooking. High heat should only be used for searing meats for a short period of time.

Q How do I care for the Bamboo utensils and boards?

A. We recommend washing your bamboo utensils and boards in hot soapy water and drying immediately. To preserve the life of your bamboo board’s natural timber lightly oil with food grade oil from time to time and wipe down with a damp cloth to clean. Do not use in the mircowave or oven.

Q Can Luke Nguyen cookware be used on all cooktops?

A. Luke Nguyen cookware is suitable for use on all cooktops exluding induction.

Q Can I use stainless steel utensils?

A. The Luke Nguyen ceramix coating is three times tougher than regular non-stick coatings and can withstand the use of metal utensil however we have included a BONUS bamboo utensil with the Luke Nguyen Griddle and Chefs Pan, bamboo utensils are ideal for use with the Luke Nguyen range.
