PROFESSOR SHU-TING CHANG

PH.D

Professor Shu-Ting Chang, Emeritus Professor of Biology at the Chinese University of Hong

Kong, was Chairman of the Department of Biology from 1983-1994; and was President of

the Hong Kong Society of Microbiology (1982-84). Member of Executive Committee of

International Society for Mushroom Science (1996-04); Professor Chang is now the

Vice-President of World Society for Mushroom Biology and Mushroom Products; and Director of

Hong Kong Microbiological Resources Centre, sponsored by the United National

Educational, Scientific, and Cultural Organization (UNESCO). He is also the Director of the

Centre for International Services to Mushroom Biotechnology under the aegis of the United

Nations Industrial Development Organization (UNIDO), and Editor of the International

Journal of Medicinal Mushrooms.

He was awarded a post-doctoral Fellow at Harvard University during 1966-67, a Visiting

Fellow at the University of Tokyo in 1969 and at the same time a Visiting Fellow of

Australian National University (ANU) and the Commonwealth Scientific and Industrial

Research Organization (CSIRO) during 1972-73 and 1978-79 respectively. Honorary

Visiting Professor at the Department of Biological Sciences, Wollongong University, NSW,

Australia (2001-03).

 Professor Chang has authored or co-authored over 200 articles in scientific journals, and 21 books

and booklets; which cover the fields of fungal genetics, mushroom biology, mushroom cultivation, medicinal mushroom products, and lignocellulosic biomass wastes management and utilization.

 Since 1977, Professor Chang has been associated with UN agents, e.g. UNESCO, UNU, UNIDO, FAO,

and UNDP/UNOPS as a consultant on mushroom cultivation and mushroom products. Since 2000, Professor Chang has been invited twice by Commonwealth Secretariat in London to serve as a consultant on mushroom farming in Namibia. He has also been invited to conduct many training workshops/courses on mushroom biology and mushroom biotechnology all over the five continents. He has also been invited to serve as scientific adviser and honorary Professor for over 30 Research Institutes (e.g., Shanghai Institute of Edible Fungi), and Universities (e.g., Tsinghua [Qinghua]

University, Beijing) in China. In Africa, Professor Chang has been honourably called as “Mushroom Missionary”—travelling five continents, teaching mushroom biology.

 Professor Chang and his family have moved to Canberra, Australia after his retirement from the

C.K. CHEUNG

Professor Peter C.K. Cheung obtained his PhD from the University of New South

Wales in Australia and is the Director of the Food and Nutritional Sciences

Programme at the Chinese University of Hong Kong. Professor Cheung’s research

interest is on bioactive components in functional foods with a focus on the

structure and function of dietary fiber, especially mushroom polysaccharides.

He is the associate editor of Bioactive Carbohydrates and Dietary Fiber and

editorial board members of 4 food science journals. He is the author of over 100

SCI publications including 2 books: Mushroom as Functional Foods and Handbook

of Food Chemistry.

HA WON KIM, PH.D

Professor Ha Won Kim has been working on biologically active natural products, especially from

fungi or mushrooms at the University of Seoul, Korea. Many of his research are focused on the

intracellular signal transductions and molecular biology oriented works and already has many

papers. He is the authors of the immunology or mushroom books such as ‘

Cancer Arresting

Phellinus Mushroom’

(Seoul, pp. 232, 2006) and ‘

Cancer, Don’t Worry Any More: Beta-glucan

Therapy

’ (Seoul, pp. 153, 2003). His major research working area is development of the

anti-cancer compounds from mushrooms and he has many papers on the action mechanisms of the

anti-cancer compounds. As his major background is microbiology and immunology, he is also

working on the Dectin-1 beta-glucan receptor signal transduction in the macrophage by using

immunomodulating beta-glucan from medicinal mushrooms. More recently he is trying to work on

relationship between obesity and inflammation. His laboratory is well equipped with modern

experimental facilities such as FACS, ultracentrifuge, HPLC-Mass, ELISA, tissue culture system,

western blot system and gene cloning.

kgs per month of finished mushroom products, making this the largest medicinal mushroom production facility in the world. This equates to more than sixteen million bottles of health supplements per month. This plant currently produces more than 50% of the total Cordyceps consumed in the world.

Misc. Data: He first became interested in growing mushrooms in 1976. As a hobby, he cultivated many varieties of mushrooms from 1976 until 1997, at which time he started a company called

Mushrooms Maui. Managing this company became his full time job, until he sold this company to Aloha Medicinals, Incin Jan 2000. As President and Director of Research at Aloha Medicinals, he is responsible for the acquisition of rare Medicinal Mushroom strains, their cultivation, and research into the medicinal properties of the mushrooms. Aloha Medicinalshas brought onto the market more than 60 different Medicinal Mushroom formulations since 2000, several of which have received drug approval in various countries.

 As Director of Research for Aloha Medicinals Inc, he was and is responsible for the design and conduct of several Human Clinical Trials, including a very successful trial using one of Aloha

Medicinals’formulations (Immune-Assist Critical Care Formula™) in the treatment of advanced stages of Cancer. He was also responsible for another extremely successful clinical trial with the same product for the treatment of Hepatitis and another trial on Alcoholic Liver Disease, as well as a clinical trial conducted in Ghana, Africa, testing our third-generation Medicinal Mushroom formulation (Immune-Assist 247™) for the treatment and control of HIV/AIDS. This trial showed HIV to be a manageable disease when caught in the early stages. In this trial, patients testing positive for HIV but who still have a high T-cell counts are given Immune-Assist 247daily, to keep the T-cell count from declining, and thereby extending the period of time before a compromise of the immune system occurs and therapy with antiretroviral drugs must begin. This may very well herald in an entirely new way to treat this dreaded disease, using a low cost, non-toxic medication to manage HIV, making this a manageable disease in much the same way that diabetes is managed with the use of insulin. This could dramatically change the long-term outlook for HIV patients worldwide.

 In April of 2002,Aloha Medicinals Inc. took over operation of the oldest mushroom research company on the West Coast of the United States, formerly Stoller Research Lab. This facility, which

has been in continuous research and production of mushroom products since 1955, has been completely re-tooled and re-organized to maximize the production of specific medicinal compounds from mushrooms, specializing in Cordyceps sinensis.

 He is presently managing the operations at the Aloha Medicinals Inc. research and manufacturing facility in Nevada and oversee the production of all the raw materials for Aloha Medicinalsline

of medicinal and health supplement products, as well as supplying raw material into the research and nutraceutical fields for human and veterinary medicine.

 With his extensive background in mechanical engineering, and his extensive knowledge of fungal biology, he was able to design and built most of the equipment and infrastructure used in his

unique production methodology. The combination of the unique production methods that he has developed, and the specific-application machinery which he has designed, is what makes Aloha Medicinalsthe major medicinal mushroom production company in the world today. Utilizing these new production methods, we are able to produce medicinal mushroom products that are not only of a greater consistency and potency than has ever been possible in the past, but also to produce these more cost effectively than any other bio-tech lab in the world.

 He has conducted several seminars on mushroom cultivation techniques, and presently act as a Mycology Consultant for the Government of Ghana, the Denman Island Forest Products Co-Op in

Denman Island, Canada, and a large number of Culinary and Medicinal Mushroom production Companies.

 He is on the editorial board of the “International Journal of Medicinal Mushrooms”, and is the peer-reviewer for a number of professional journals on Cordyceps and other medicinal fungi. He is

the only Non-African ever to be elected to the Executive Committee of the African Society of Edible and Medicinal Mushrooms (ASEMM). He is also Vice President of the International Society for Medicinal Mushrooms (ISMM)

VENTURELLA

 Giuseppe Venturella was born in Palermo (Italy). He completed his University studies at the Agricultural Faculty of the University of Palermo

(Italy) in 1982.

 He is currently member of the Department of Agricultural and Forest Sciences of the University of Palermo as full Professor of Forest

Botany and Mycology.

 In 2012 he was appointed as Coordinator of the graduate and postgraduate degrees of “Environmental and Forest Sciences”,

“Agro-engineering” and “Environmental Redevelopment and Naturalistic “Agro-engineering”.

 From 1991 to 2000, G. Venturella was the Editorial manager of the international journals “Flora Mediterranea” and “Bocconea”.  He was also member of the Scientific Committee of the International Foundation pro Herbario Mediterraneo.

 Since 1993 he has been scientific coordinator of research project funded by Italian government. Scientific coordinator of a C.N.R. bilateral

project Italy/Greece.

 Member of the List of Consultees for the preparation of Important Plant Areas Site Selection Manual of Planta Europa. Coordinator of the

Working Group for Mycology of the Italian Botanical Society (years 2003-2005; 2009-2011; 2011-2013). Member of the Executive Committee of International Mycological Association (2003-2005). Member of the editorial board of the international journal Mycologia Balcanica. Coordinator of the Working Group of Mediterranean Mycology within the European Mycological Association.

 The main current activities and research interests of G. Venturella could be summarized as follows: Ecology, systematics of hypogeous

and epigeous fungi; biodiversity and conservation of macromycetes; mushroom breeding and cultivation, nutritional and medicinal value of macromycetes with particular reference to Pleurotus species. Ethnobotany, Forest Botany.

 Prof. Venturella is author of 254 scientific publication (139 on national and international scientific journals, 10 articles in scientific books,

BAOJUN (BRUCE) XU

 Dr. Xu, Associate Professor in Food Science Program of UIC, co-supervisor of doctoral student stationed in Hong Kong

Baptist University-United International College Joint Institute of Research Studies (HKBU-UIC-JIRS), and Associate Director of UIC Key Lab -Laboratory for Health Promotion Mechanism of Medicinal Food and Folk Remedy.

 Dr. Xu received Ph.D from Department of Food Science in Chungnam National University, South Korea, in 2005. He

conducted postdoctoral research work in Department of Cereal and Food Science in North Dakota State University in 2005-2008, followed by postdoctoral research work in Department of Veterinary Clinical in Purdue University, and Gerald P. Murphy Cancer Foundation during 2008-2009.

 He owns memberships of American Institute of Food Technologists (IFT), American Chemical Society (ACS), and senior

membership of Chinese Institute of Food Science and Technology.

 Dr. Xu is serving as Associate Editor-in-Chief ofFood Science and Human Wellness, Regional Editor ofAdvance Journal of Food Science and Technology; Editorial Board Members ofFood Science & Nutrition,International Journal of Nutrition and Food Sciences,Austin Journal of Nutrition and Food Sciences,The Open Addiction Journal,The Open Nutraceuticals

 Due to the outstanding contributions of Dr. Xu to the innovation and development of food industry and research, the

DR. OMOANGHE S.

ISIKHUEMHEN

His laboratory is responsible for the project titled: Edible and Medicinal

Mushroom Farming in North Carolina: A Cash Crop for the Future, funded

by Golden LEAF Foundation Inc. In line with this project, they are conducting

research on cultivation of exotic mushrooms and working with participating

farmers in developing the mushroom industry in North Carolina. The goal is to

make North Carolina a leader in the production of edible and medicinal

mushrooms in the US . They have edible mushroom culture Bank, from which

strains are applied areas of research that includes mushroom breeding and

strain improvement, medicinal and functional food properties in mushrooms

and the application of white rot fungi in bio-mining, bio-refining agricultural

wastes, including bioremediation of pollutants. Research in truffles forming

fungi is ongoing in collaboration with Dr. Rytas Vilgalys of Duke University,

Durham, USA. He is also involved in technology transfer and education on

application of low-cost technology in sustainable commercial mushroom

cultivation in developing countries.

ANGELA AMAZONAS

 Angela Amazonas graduated in Biomedical Sciences in 1972, received her MSc title in

Agricultural Microbiology in1978 and the PhD title in Biochemistry in 1993. Her PhD thesis developed at Imperial College of Science, Technology and Medicine, London (19851988) -versed on structure analysis of the enzyme pyruvate decarboxylase of Saccharomyces

cerevisiae. The MSc dissertation was on fungal protein production. As undergraduate student she was probationer in several laboratories on the fields of medical mycology, cancer research, human nutrition and clinical analysis. Angela has spent 33 years of her professional life as a researcher at the Brazilian Agricultural Research Corporation – Embrapa, from 1975 to 2008, when she retired. She had a strong role in the planning of research laboratories and many projects. From 1995 to 2008 he was responsible for the Laboratory of Microbiology and leader of a research group on macrofungi at Embrapa Forestry, from which she received the Award for Excellency in 2003. In October 2007, she was a research visitor at the Academy of Sciences of the Czech Republic working on cryopreservation of Basidiomycetes. In 1999, she awarded a Visitor UNESCO/MIRCEN Short-term Fellowship at the Chinese University of Hong Kong, where she could follow and discuss projects on bioconversion technology with emphasis on mushroom biology. After retiring, she continues participating in national and international mushroom

scientific meetings. She also had an especial play in the recent inclusion of the Brazilian National Mushroom Growers Society as a member of the International Society for Mushroom Science.

 Sandra Montoya is Associate Professor of Food Engineering at the University of Caldas, Colombia. She

received a Chemical Engineering degree Specializing in Food Science & Technology, Master in Engineering - Chemical Engineering and a PhD in Agricultural Science. From 1990 to 1993, she worked in the mushrooms process industry. From 1993 to 1996, she worked as Head of the

From 2000 to 2004, she worked in the SENA Regional Caldas (National service learning in Colombia, training for work), where she designed, assembled and launched a pilot plant scale for the experimental

production of different species of fungi (Lentinula edodes, Pleurotus ostreatus, P. sajor-caju, P. pulmonarius). She joined the Faculty of Engineering at the University of Caldas in 2004 where she coordinates the biotechnology course for food engineering students and initiated several lines of research related to the development of technologies for growing different species of macrofungi fungi as: Ganoderma lucidum, Pleurotus spp, Coriolus versicolor, Lentinula edodes, Grifola frondosa and others. A macrofungi using biotechnology for the production of bio-substances of industrial interest, especially in the production of intra and exo - polysaccharide macromycetes by solid-state

fermentation and submerged fermentation and basidiomata. She is currently an associate Professor and the director Bioprocess Plant of the university, which are held all these biotechnological

processes with macrofungi, including an experimental crop for producing fruiting bodies. Similarly, in this plant out process putrescine residues use of restaurants and cafeteria's component college campus, making compost, which we now have a line of research for developing agricultural bioproducts are carried.
