This outstanding historical location is equipped with the latest teaching and cooking facilities to educates chefs, pastry chefs, sommeliers and F&B managers from all over the world.
It covers over 5.000 mq with: a conference room and an agora room with kitchens, 7 training classrooms, 4 demo classrooms, 2 pastry labs and 1 sommellerie room fully equipped with A/V system, a 17th century wine cellar, 1 sensory analysis lab, 1 R&D kitchen, 1 library with 12.000 culinary books, newspapers and dvd collections, a central kitchen and 2 restaurants seating 180 guests.

ALMA realizes tailor-made courses, specially conceived to meet the requirements of Restaurant Businesses, Chains of Hotels and Grand Hotels, Culinary Schools and Institutions.
The structure and the content of each program are arranged in close collaboration with the customer, in order to obtain the best result for every course.
ALMA has developed partnerships with 20 Culinary Schools all over the world. Together with our partners, we have designed tailor made courses, called Joint Programs.
The first part of the joint program consists in a course taking place in the student’s country of origin.
During the second part students arrive in Colorno to start the residential phase and then, they complete this lifetime experience with an internship in a renowned Italian restaurant with the objective to put into practice what they learnt during their course. This experience gives students the opportunity to deal with restaurant timings and pressure, to interact with professional Chefs and specialized operators and to experience the peculiarities of the regional Italian Cuisine.
