LOCATION The Balmoral is located in the heart of Edinburgh, at No. 1 Princes Street, the main shopping area overlooking Edinburgh Castle. Not just a hotel, it is also a landmark thanks to its majestic clock tower that plays an important role in the city’s skyline. The Balmoral is located eight miles from Edinburgh International Airport (a 20-minute taxi ride) and is adjacent to Waverley Rail Station.

HISTORY W. Hamilton Beattie and A.R. Scott won a competition to design The Balmoral – known then as The North British Station Hotel - and owned by the North British Railway Company. The hotel was opened on 15th October 1902. The hotel closed for a major refurbishment in 1988 and re-opened as The Balmoral in 1991. Sir Rocco Forte bought The Balmoral on 1st March 1997.

DESIGN & RENOVATION Olga Polizzi, Director of Building &

Design, Rocco Forte Hotels has fully refurbished The Balmoral. Olga Polizzi has used Scotland’s landscape as her inspiration and the carpets, paint colours and fabrics used throughout the hotel reflect the earthy

colours of the moors, mists and heathers that one associates with Scotland.

HISTORICAL MILESTONES

1895 - W. Hamilton Beattie and A.R. Scott won a competition to design The Balmoral – known then as The North British Station Hotel (The N.B.) and owned by the North British Railway Company.

1902 - The hotel opened on 15 October 1902 as The North British Station Hotel – the only residential building ever erected on the south side of Princes Street – was pronounced one of the great railway hotels, described as a “free rendering of the renaissance period, linking the old Scottish architecture of the old town with the rather severe classical architecture of the new”. The hotel’s iconic clock was set three minutes fast, so that people wouldn’t miss their trains. This is still the case today. The only day that the clock runs on time is on 31st December (Hogmanay) for the city’s New Year celebrations.

1922 – The North British Railway Company became part of the London and North Eastern Railway Company and the hotel started blending and bottling its own whisky, wine and port.

1932 – In July, comedy duo Laurel and Hardy visited the North British Hotel as part of their visit to Edinburgh. Crowds gathered outside the hotel to catch a glimpse of the famous pair.

1947 - The railways were nationalised by British Rail, and the hotel employees became members of the National Union of Railwaymen.

1960s – Over the years a regular galaxy of film and sports stars, princesses and politicians, have posed for photographs by the hotel pillars. Celebrity visitors to the hotel include Sophia Loren, Elizabeth Taylor, Paul and Linda McCartney.

1970s – The Queen Mother was a regular visitor to the hotel, where she liked to dine on plain roast lamb for lunch. Prime Ministers, Edward Heath and Harold Wilson, also visited.

1983 - British Rail sold The North British Station Hotel to The Gleneagles Hotel Company.

1988 - The hotel closed for a major refurbishment.

1990 - Balmoral International Hotels - an Edinburgh-based company - bought The North British Station Hotel, with the intention of making it a flagship hotel for a new luxury international hotel group.

1991 - In February the hotel reopened its doors to the public as The Balmoral Hotel, (Balmoral meaning

“majestic dwelling” in Gaelic) following a £23-million refurbishment, recapturing its past splendour and majesty.

1997 – On 1st March Sir Rocco Forte purchased The Balmoral, which was the first hotel within his new Rocco Forte Collection.

2003 – In January, The Balmoral’s Executive Chef, Jeff Bland, was first awarded a coveted Michelin Star for culinary excellence in the hotel’s Number One restaurant.

2003 - In December, The Balmoral appointed Debbie Taylor, the first female General Manager in its 101- year history.

2004 – In March, the hotel completed a £7-million refurbishment programme. Olga Polizzi, Director of Building and Design at Rocco Forte Hotels, oversaw the complete refurbishment of the hotel, comprising its 188 bedrooms, The Sir Walter Scott Suite, seven further conference and banqueting suites, Hadrian's Brasserie, Number One restaurant and the lobby.

2005 – In March, The Balmoral launched its Bollinger Bar in the hotel’s Palm Court.

2007 – 11th January, J.K. Rowling finished writing ‘Harry Potter and the Deathly Hallows’ (the seventh and final instalment in the Harry Potter series) at the hotel. To mark the occasion, the author signed an antique bust in the room in which she stayed.

2007 – 1st March, The Balmoral celebrates 10 years as a Rocco Forte Hotel, also marking the 10-year anniversary of The Rocco Forte Collection.

2007 – 7th November, The Balmoral launched the chic and stylish Balmoral Bar after a complete refurbishment by Olga Polizzi.

2009 – Bedrooms on the 5th and 6th floor of The Balmoral are fitted with new Italian marble bathrooms with iconic Sean Connery prints.

2011 – In June, The Balmoral completes a soft refurbishment of its fourth floor bedrooms.

2011 – 7th October, The Balmoral’s fine-dining restaurant, Number One, retains its Michelin star for the 10th successive year.

2012 – In June, the Balmoral completes a soft refurbishment of the first, second and third floor bedrooms.

2012 – 15th October, The Balmoral celebrates its 110th Anniversary.

2013 – In September, The Balmoral launches SCOTCH – a new signature whisky bar.

2013 – In October, The Balmoral completes a full refurbishment of Palm Court.

2014 – In October, The Balmoral’s fine-dining restaurant, Number One, retains its Michelin star for the 13th successive year.

2015 – In January, The Balmoral completes a £200,000 refurbishment of Number One.

2017 – In October, The Balmoral completes a refurbishment of Castle Facing bedrooms.

2017 - Rocco Forte Hotels marks its 20th year, The Balmoral carries out a refresh of its castle view rooms along with an upgrade of the hotel’s J.K. Rowling Suite.

2018 - Brasserie Prince opens after a multi-million pound refurbishment of the hotel's bar and brasserie;

the hotel's old town view rooms are refurbished including the Scone & Crombie suite, the hotel's presidential suite.

2019 - The hotel's Princes St view rooms are upgraded, along with the hotel's royal suite, the Glamis Suite.

2020 - The hotel is named as the first and only hotel in Scotland to receive a five star award from the world- renowned Forbes Travel Guide.

DESIGN FACTSHEET

BY OLGA POLIZZI, DIRECTOR OF BUILDING & DESIGN

Most rooms, though of many different shapes and sizes, are very spacious and comfortable. Many have lovely views up to Edinburgh Castle and Princes Street and the views over Waverley Station are good for trainspotters! It is the only hotel in Edinburgh where you get a clear view of Arthur's Seat.

It is difficult when designing a Scottish hotel not to fall into the usual clichés of tartans and old highland prints, so I have given a subtle hint of checks and tartans in the contemporary polished cotton fabric of the blinds and curtains. The striped carpets and paint colours in the bedrooms have the earthy colours of the moors, mists and heathers that one associates with Scotland.

Most of the rooms have high ceilings and many have unusual turret areas. The main objective was to keep them uncluttered and to mix contemporary furniture with the odd antique piece. Natural fabrics were used throughout: linen, silk, wool and leather (introduced on headboards, valances and comfortable armchairs).

The artwork has been selected to reflect Scottish themes such as Donald Campbell and his 'Bluebird', the Skerrymore Lighthouse and a Circular Tour of the Highlands by Richard Long. Bronze stags, golden eagles and Scottish literature can be seen throughout the rooms. Glass bowls in "The Colours of the Highlands"

range are made by Jo Vincent, an artist who works only in glass.

RICHARD COOKE - GENERAL MANAGER

Richard Cooke is responsible for the day to day operations and strategic direction of the hotel, including 167 rooms and 20 suites; the hotel’s Michelin-starred restaurant, Number One; all-day dining venue Brasserie Prince; the iconic Afternoon Tea lounge Palm Court; the hotel’s dedicated whisky bar, SCOTCH; The Balmoral Spa and the hotel’s meeting and conferencing offerings.

Mr Cooke brings over two decades of experience in hospitality management across a variety of five-star properties in Canada, USA, South East Asia and China. He previously worked as Area General Manager of the Shangri-La Hotels in Toronto and Vancouver, having opened the Shangri-La Toronto. Prior to this he spent ten years in various management positions with Shangri-La Hotels including General Manager of Traders Hotel in Kuala Lumpur, Hotel Manager of the Shangri-La Hotel in Singapore and Hotel Manager of Pudong Shangri-La Hotel in Shanghai.

He started his hospitality career in the UK before moving to New Zealand and the Regent Hotel in Auckland. He subsequently moved to the U.S where he held the position of Executive Assistant Manager at The Ritz Carlton in Dearborn, Michigan and The Ritz Carlton in San Francisco before moving to Rosewood Hotels and Resorts in Dallas as Director of Food and Beverage.

GARY ROBINSON - EXECUTIVE CHEF

Executive Chef Gary Robinson arrived at The Balmoral in June 2019 having travelled the world - gaining over 25 years of global culinary experience, most notably in the honourable position of Head Chef to HRH the Prince of Wales.

Gray’s vision for The Balmoral - ‘Coming home to Scotland opens the door to an abundance of produce thanks to our natural larder as well as artisanal suppliers and small producers that we can champion in the hotel. No other country has shellfish like we do, the game or hedgerow produce. Sustainability is at the core of everything I do and I look forward to working with my talented team and experts in Scotland to do the ingredients justice on the plate.”

From learning to pick mushrooms with forager Dru McPherson on the grounds of Balmoral Castle to pulling noodles in Hong Kong’s most historic harbour, Gary strongly believes in creating dishes that are as meaningful, sustainable and authentic as possible. Showcasing excellence within hotels, restaurants, private households and clubs, he is a strong advocate for classical cooking techniques that retain the natural goodness of homegrown ingredients. He has gained further knowledge in the classical style from working alongside Michelin star chefs Alain Passard, Jacques Chibois and Roger Verge.

Previously Gary held the role of Executive Chef at the British Embassy in Washington D.C, a position which saw him cook for numerous presidents, and also spent five years overseeing the entire Condé Nast International Restaurants portfolio. Before joining The Balmoral he launched the culinary programme for The Conduit Private Members Club in London, as well as holding Executive Chef positions at Kowloon Shangri-La and the exclusive Aberdeen Marina Club in Hong Kong.

NUMBER ONE

Michelin-starred Number One offers contemporary dining coupled with world class Scottish hospitality.

Head Chef Mark Donald and his team have developed a menu fusing modern Scottish cuisine with international flair.

Designed by Rocco Forte Hotels’ Director of Design, Olga Polizzi, the rich red lacquered walls in Number One are adorned by art in the form of a large format triptych print of a Scottish oak tree by Adam Ellis and artwork from the Royal College of Art in London. Standout design elements include striking dove grey wool banquettes with golden yellow leather accents, elegant Lyndon Albany chairs with distinctive button backs and solid timber oak flooring throughout the restaurant.

Number One is also dedicated to providing the highest levels of service. For 20 years, Gary Quinn, Director of Food & Beverage, has overseen the front of house operations at Number One. With Restaurant Manager Emma Lonie and Assistant Restaurant Manager Sarah Dalgleish, Gary ensures diners at Number One receive the very best service. Their passion in creating the best dining experience has seen Number One awarded its Michelin star for 17 consecutive years.

SCOTCH

The Balmoral’s whisky bar, SCOTCH, opened its doors in September 2013 paying homage to Scotland’s national drink. Tucked away from the hotel lobby, SCOTCH offers the largest collection of single malt Scottish whiskies available to the general public in Edinburgh. The collection boasts over 500 whiskies from Speyside, Islay, Campbeltown, the Highlands and the Lowlands.

SCOTCH’s collection is overseen by three highly trained Whisky Ambassadors who are on hand to offer guests advice when selecting a dram. The Whisky Ambassadors wear contemporary highland attire by Kinloch Anderson, kilt-makers to Her Majesty The Queen, in cheviot, gamekeeper and gold tweeds mixed with gold satin trims and whisky coloured accents.

The Olga Polizzi-designed bar features a palate of whisky coloured tones creating a warm, intimate ambience in which to discover Scotland’s national drink. The centrepiece of the room - a hand-crafted oak- panelled whisky cabinet – is complemented by interior furnishings in natural fabrics such as wool, cord and leather.

Brushed brass and black granite bar creates a striking sense of theatre in the room which contrasts with golden and chocolate velvet armchairs, neutral tweed sofas and amber coloured walls.

PALM COURT

Palm Court is an Edinburgh institution that is as glittering as its glass dome and Venetian chandelier. Set within the heart of The Balmoral, Edinburgh locals have enjoyed the tradition of Palm Court’s award- winning afternoon tea since 1902.

Subtle local references are made throughout the decor such as the thistle patterned sofa material named

‘Edinburgh’ by Bernard Thorpe. Contemporary tonal greys are contrasted by splashes of dynamic bright blue whilst the traditional colonial palm trees inject a flash of green.

The walls are adorned with specially commissioned hand-painted De Gournay wallpaper with well-known follies of Edinburgh incorporated into the landscape.

A mix of table styles offers the flexibility of traditional seating and more informal casual dining throughout the room.

Suite 230 – The Scone & Crombie Suite (Presidential Suite) Our iconic signature suite is decorated with rich fabrics, opulent furnishings and space in abundance. CASTLE VIEW SUITES

Take in views of Edinburgh Castle and Princes Street Gardens from these six roomy suites, most of which have original working fireplaces. Each suite is named after a Scottish river or castle — Drummond, Rothesay, Brodick, Bothwell, spey and Dee.

Suite 306 – The Drummond Suite. Drummond Castle is situated in Crieff, Perthshire (central Scotland).

Suite 308 – The Rothesay Suite. Rothesay Castle is situated in Rothesay on the Isle of Bute, known as Scotland’s jewel on the Clyde.

Suite 318 – The Brodick Suite. Brodick Castle is situated on the Isle of Arran (an island in the Clyde Estuary, in western Scotland). The Isle of Arran is the most southerly Scottish island and sits in the Firth of Clyde between Ayrshire and Kintyre.

Suite 320 – The Bothwell Suite. Bothwell Castle is located south east of Glasgow. It was built in 1242 by Walter of Moray. The River Clyde runs along the north side of the castle.

Suite 504 – The Spey Suite. Named after the River Spey (the second longest river in Scotland), in north east Scotland.

Suite 520 – The Dee Suite. The majestic Royal Dee flows from the heart of the Cairngorm Mountains for over 80 miles to the North Sea at Aberdeen, in north east Scotland.

Our four Grand Suites have turret-style alcoves. Each has a name synonymous with Scotland — Braemar, Stirling, Dunrobin and Tay.

Suite 238 – The Braemar Suite. Braemar Castle is in Royal Deeside, in north east Scotland. Braemar is home to the famous Braemar Highland Games, which the Royal Family attends every September.

Suite 252 – The Stirling Suite. The famous Stirling Castle, in Stirling, is situated in central Scotland (this area is referred to by tourists as “Braveheart Country”). This is one of the grandest of Scotland's castles, as well as being a popular visitor attraction.

Suite 352 – The Dunrobin Suite. Dunrobin Castle is located a mile north of Golspie in Sutherland on the east coast of northern Scotland, about 90 minutes north of Inverness.

Suite 536 – The Tay Suite. The River Tay cuts through Perth and Kinross, Angus, Dundee City and Fife, throughout central Scotland. The Tay is the longest river in Scotland.

CLASSIC SUITES

Our five Classic Suites have a separate bedroom and a sitting room. They combine elegant, contemporary features with characteristics borrowed from our Scottish heritage.

Suite 240 - The St. Andrew Suite. St. Andrews Castle is situated in the well-known and picturesque university town of St. Andrews (in Fife – (north) east Scotland).

Suite 250 – The Aberdour Suite. Aberdour Castle is situated in the coastal village of Aberdour in Fife (central east Scotland).

Suite 324 – The Blair Suite. Blair Castle is the ancient seat of the Dukes and Earls of Atholl. The castle enjoys one of Scotland’s finest settings in the heart of Highland Perthshire.

Suite 340 – The Dirleton Suite. Dirleton Castle lies two miles west of North Berwick in East Lothian, just south of Edinburgh. Dirleton Castle has a beautiful garden, which dates back to its earliest days as a medieval fortified residence.

Suite 350 – The Brunstane Suite. Brunstane Castle is situated in Midlothian, just outside Edinburgh.

The famous Rosslyn Chapel is also situated in Midlothian.
