Welcome to Mother Vine, where we want to share with you our love of all things vinous.
The name Mother Vine comes from a clone of Pinot Noir, the MV6, or Mother Vine 6. Originating from Burgundy’s famous Clos Vougeot vineyard, it was part of the collection of grape vine cuttings brought to Australia by James Busby in 1832, and it remains an important clone today in some of our finest Pinots.
The Mother Vine connects Australia with France, and with Burgundy. Our wine list aims to stay in touch with locals from the regions that surround Adelaide, to explore a few trends in winemaking and wine drinking, and to have plenty of wines that we love.
David, Frank, Pablo, Michael, Paddy, and team MV.
Mother Vine strives to offer wines of provenance to our guests. Due to our extensive list - some wines may be unavailable from time to time. Ask staff for a recommendation if your first selection is
currently unavailable.
All our wines are handled with care and stored in our temperature controlled wine room – the vault.
Ask staff if you want to take a peek inside.

HALF THE SIZE, TWICE THE FUN – 375ml
Size is important, but sometimes good things come in small packages. And as a wise person* once said, sometimes 750ml between two people just isn’t quite enough. So like a good slips fielder, take the half- chances when you can, and don’t be caught out with too little, or too much. Here they are, small but beautiful...

FEATURE WINES - Envinate, Canary Islands
Pioneers of the Canary Islands..
Envinate was established in 2005 and is the project of 4 winemakers; Roberto Santana, Alfonso Torrente, Laura Ramos, and José Martínez. The 4 met while studying Oenology at the University of Alicante in southeastern Spain and discovered that they shared the same vision about wine. As a result, they founded Envínate. This is a project that focuses on distinctive parcels of vines with the vision of creating pure and authentic wines that express the terruño of each parcel.
The Canary islands unique climate defies what is known as optimal climate conditions for grape growing with Tenerife island being no exception. Tenerife island is
where all of these wines are grown and is home to the volcano Teide, the largest peak in Spain at 37620 meters.
The Vineyards are incredibly steep, often blanketed in fog and often utilize animals to navigate the sites.
The vineyards are organically maintained and the winemaking is true to the vineyards. The wines are hand picked, the grapes foot trodden and the ferments exclusively using wild yeasts.
Táganan is a local name for the vineyard area located on the northeast side of Tenerife. The vineyards are mix planted with a dizzying array of obscure indigenous varieties grown on very old bush vines in the steep volcanic soils overlooking the ocean. Taganan Margalagua, or “Mother of the Water '' is a single vineyard site. The Vineyard is treacherously steep, elevated at 150-250 meters, just above the Atlantic Ocean on the north side of Tenerife.

PETILLANT NATUREL
Fondly referred to as Pet Nat, this is a style that is taking the natural wine scene by storm. An ancient method of producing a slightly spritzy wine. The method involves bottling wine that has not completely finished primary fermentation and trapping the gas therefore making the wine fizzy.

CHAMPAGNE
Champagne is a region located an hour east of Paris and is greatly celebrated. Champagne houses have been producing the wine that we all know and love for centuries. Including Pol Roger, Louis Roederer, Billecart Salmon and Krug. These houses each have a unique house style, but also a variety of other styles that contribute to the remarkable diversity that is found in champagne. Diversity from composition of fruit, dosage, blending, vintages all contribute to the diversity, lots of which are represented on this list.
Blanc de Blancs is a style of Champagne that is celebrated on this list. The wines are celebrated for their purity and intensity of fruit, minerality and elegant tight acidity. They consist of only Chardonnay compared to the common blend of the three major varieties Pinot Noir, Pinot Meunier and Chardonnay.
Grower Champagne consists of independent growers producing their own wine which represents a singular place or vineyard. These smaller producers are becoming largely appreciated and sought after, Agrapart is a great example of this.

SHERRY
…the word, comes from Jerez, and the full name of the town is Jerez de la Frontera. It is in the extreme south of Spain and the frontera of the name refers to the frontier with Northern Africa, where the Islamic invaders came from in 711.
We love sherry, but know that the flavours can be pretty confronting. However, if you acquire a taste for sherry, it’s hard to beat a tangy Manzanilla for an aperitif that refreshes the palate and goes brilliantly with savoury snacks. Although the labelling of sherry can seem opaque, it’s actually a pretty simple story. The dry white wines, or base wines, are classified as being fine or not. The fine ones are fortified a little and aged under flor, a yeast that forms a film on the top of the wine while in barrel.
Flor imparts flavor – briny, iodine, seaspray – and protects the wine from oxidation. After some time in barrels, which get refreshed with young wine now and then, these fine ones are bottled with the name Fino. A Manzanilla is a Fino which has been aged in the town of Sanlucar de Barrameda, which is right on the coast, and is a touch cooler and more humid, making the flor grow thicker. Some of the fino’s are left to age further once the flor has died off – they’re called Amontillado, with those in between Fino and Amontillado having names like Manzanilla Pasada, or Fino Amontillada.
The not fine ones, meanwhile, get a stronger dose of alcohol to fortify, and then age without flor, and therefore with long and gentle exposure to air. These are Olorosos. Like Fino and Manzanilla and Amontillado, Olorosos start their life dry, but they are often sweetened; sometimes a little, sometimes a lot.

MADEIRA
If Madeira didn’t exist, we would have to invent it. Picture a remote island in the Northern Atlantic Ocean, some 500km west of Morocco. Isolated and lush, with a sub-tropical climate, it seems an unlikely home to one of the world’s most treasured fine wines, one that is as unique as it is long-lived. Based on a handful of local grape varieties, (Malmsey, Boal, Verdelho, and Sercial being the most famous), the wines were traditionally fortified, giving them stability for transport by ship. By chance, the traders learned that warm conditions on sea voyages improved the wines, and gentle heating of the wines was adopted by the producers as part of a method that has been refined over centuries. Stored in old oak barrels in warm lofts, the wines, with high acidity and varying amounts of sweetness, are slowly cured by the warmth and gentle oxidisation, gradually maturing into intriguing, complex, and delicious elixirs. The range of flavours is huge, but imagine the dried fruits, quince paste, and walnuts on the cheese board and that gives you a good start.
Enjoy!

RIESLING
Riesling is, for many people, the greatest of all white grapes. It gives us brilliant, intense, and age-worthy wines that can be great young or old, dry or sweet. And to top it off, some of the world’s best Rieslings are made just up the road in the Clare and Eden Valleys.
German Rieslings are some of the finest white wines of the world. Do not be hesitant based on the old Australian association with sweeter wines, that dry is always better. Riesling with residual sugar is delicious when balanced.
The labeling system and laws of German Riesling production can be a mindfield, even for the educated drinker.
However a basic guide to navigating through the levels of sweetness can be eased by following the general categerios.

KELLER
‘If I had to choose one wine to show how great German Riesling can be I would choose Keller Riesling. Those wines are the German Montrachets.’ – Jancis Robinson MW
There is not much a bottle (or two) of Keller can’t fix.
Located in the small town of Florsheim-Dalsheim in the Rheinhessen region, generations of the Keller family have run the estate for over 220 years.
For those partial to good value and great quality, you will certainly find it in the Von de Fels wines. If off-dry or sweeter styles, comparable to few wines the world over are more to your taste, then the Auslese and Spatlese styles are outstanding… and can be enjoyed at breakfast, lunch or dinner.

AMBER / ORANGE / SKINS
Whether you are a fan or not, there is no stopping the rise of minimal intervention wines. One of the more notable trends to fall within this extensive and somewhat undefined bracket of wine making techniques is the inclusion of skins when fermenting white varieties. This results in an orange hue to the wine which, with age, turns to a beautiful amber, a colour akin to the fine Amontillado Sherries of southern Spain. These orange wines, like many modern wine trends, are a revival of methods used in old world regions with a long history of minimal intervention. We take a look at a few local examples as well as what we can from Europe.

CHARDONNAY FROM BURGUNDY
White Burgundy. The page where most wine makers come to browse when visiting Mother Vine. It is the fastest moving category and as a result the most edited page on the list. Small allocations come in, get listed, then go out and on and on it goes.
While some of the more iconic appellations like
Meursault, Chassagne-Montrachet, Puligny-Montrachet, and the Grand Cru of Corton Charlemagne conjure thoughts of prestige and notoriety, there is certainly great value and a number of gems to be discovered in the Village and Bourgogne level.
CÔTE DE BEAUNE
The Côte de Beaune sits at the southern tip of the Côte d'Or, between Nuits-Saint-Georges and Beaune, and then extends southwards for about 25 km to the River Dheune. While there are a number of red wines of note, particular in the north in the communes of Pommard and Volnay, the Côte de Beaune is most well known for producing Chardonnay of excellent quality. Meursault,
Chassagne-Montrachet, Puligny-Montrachet, and the Grand Cru of Corton Charlemagne are all renowned for producing some of the finest white wines of the world.

PINOT NOIR FROM BURGUNDY
The Côte de Nuits, located in the northern part of the Côte d'Or is the limestone ridge at the heart of Burgundy. It stretches from Dijon to just south of the commune of Nuits-St-Georges, which is the regional centre and gives its name to the district. Though some white and rosé wines are produced in the region, Pinot Noir is king here, and is the home of the most premium wines of the world.

CÔTE DE NUITS
The Côte de Nuits, located in the northern part of the Côte d'Or, is the limestone ridge at the heart of Burgundy. It stretches from Dijon to just south of the commune of Nuits-Saint- Georges, which is the regional centre and gives its name to the district. Though some white and rosé wines are produced in the region, the Côte de Nuits is most famous for reds made from Pinot Noir. The Côte de Nuits covers fourteen communes. Six produce grand cru wines, which are some of the smallest appellations in France; in the case of La Romanee, that equates to less than a hectare.
The Principle villages, from North to South, are Gevrey-Chambertin, Morey-St-Denis, Chambolle-Musigny, Vougeot, Vosne- Romanée, Flagey-Échézeaux, and Nuits-St- Georges.
BOJO!
Beaujolais is coming, and I’m not talking about the nouveau style of Beaujolais that gets raced through ferment and flown around the world by the third Thursday of November, which is not at all coming, at least, not to Mother Vine. ‘Real’
Beaujolais is what is getting us excited, and this is why: it’s super-drinkable, fresh, intense, and delicious, and for the sort of hand-farmed, authentic vin-de-terroir that you can get from Beaujolais, the prices are bang on.
Where is 0? At the southern end of Burgundy, (not far from the great gastro-city of Lyon) where the ground changes from limestoney to granitey, and the cépage changes from Chardonnay (Pouilly-Fuissé, Macon, etc) to Gamay, or to use its full moniker, Gamay Noir a Jus Blanc.
