COMPANY & PRODUCT OVERVIEW

The Clifton Food Range® has been developed and manufactured by Nickel-Electro.

Established in 1941 ~ Nickel-Electro is a family firm based in the South West of England and is a brand leader in temperature control laboratory and science equipment. All water baths are UK manufactured.

Nickel-Electro has adapted its scientific application water baths to develop the Clifton Food Range® which offer users unparalleled specific temperature control, to produce consistently perfect results every time.

For durability and ease of cleaning, the range is made from high quality stainless steel and is available in a choice of different sizes.

BATH CHOICE

The smaller volume baths e.g. 8 litre (FL08D), tend to be popular with smaller

professional kitchens. The bigger capacity baths are used to prepare larger quantities of food portions, for subsequent chilling and storage. Reheating, (regeneration) for service can also be done in the larger capacity baths or with a series of smaller bath placed in the relevant section. The 56 litre water bath is ideal for banqueting, outside catering and food processing companies.

EXAMPLES OF UNSTIRRED WATER BATHS

In addition to choice of volume there is also a choice between unstirred and stirred baths. The difference is this:

In an unstirred bath, (FL04D to FL56D series), the water is heated evenly throughout the chamber by convection. This results in an accurately controlled environment. (±0.15°C around set point) Some chefs prefer unstirred water baths when cooking salmon for example. In a stirred bath the water movement can sometimes be enough to damage the delicate flesh of the fish.

Unstirred baths are particularly suited to mis en place work where food is prepared over long periods of time. They are also useful for holding items at temperature. Some chefs use this style for mis en place and service.

Unstirred Baths

Advantages of unstirred:

• More bath area is usable [bath can hold more items] • Lower cost units

• More uses [for stocks, braising directly in the bath, cooking directly in fats, chocolate] • More choice, bath size specific to job required

Stirred Baths

In a stirred bath, (FL414D, FL428D, FL456D) there is a heater/stirrer unit which sits at one end of a tank. This heats the water by means of an immersed heating element and stirs the water by way of a stainless steel propeller. As in the unstirred bath, this method also results in an accurately controlled environment, (±0.01°C around set point).

The immersion circulator controller can now be rotated so that the bath can be used ‘side to side’ or end on to optimise ‘left to right’ counter top space. It can also be rotated so it can be viewed from any angle of the kitchen. As the stirrer rotates through 3 main principle viewing angles, the chef can choose whether the lid opens on the left hand side of the tank, or the

Duobaths™

Water baths in this range have two unstirred chambers in one counter top unit. Each chamber can be independently controlled allowing simultaneous processing of foods at different temperatures, with the option of using different mediums in each, e.g. water in one chamber and vegetable

FL4CA Portable Clip-on Digital Stirrer Unit

This product is a portable heater unit which can be attached to standard gastronorm tanks or a straight sided circular pot of 30cms diameter or more (minimum depth 150mm) and maximum volume of approximately 56 litres. This covers most common stockpot sizes. The entire casing is manufactured in high quality stainless steel, as is the easily removable pouch guard. The propeller is also made from high quality stainless steel and is virtually indestructible.

Accessory lids are available.

FL4CA Digital Thermometer & Probe Kit

This compact probe kit allows chefs to monitor the core temperature of food in a sealed vacuum bag. The kit is especially useful when developing and establishing specific times and temperatures for sous vide items. The kit contains a battery powered digital thermometer, two needle probes, with the longer one designed to reach the centre of larger joints of meat. A sample of probe wipes and foam seal are also included, along with a Traceable Calibration Certificate for the instrument and a waterproof countdown timer.

CFR-860-035 Compact Baths

Compact baths are unstirred and available as both single or duo chambered water baths. Controls are placed on the narrow end so that the whole unit can be run from ‘front to back’ on the counter top. This results in a saving where space is at a premium in busy kitchens. Drain taps for each chamber are located on the front panel making it easy to clean and use.

Supplied items

Lids

All baths are supplied complete with a lift off lid with an ‘easy grab’ insulated handle. In the case of the Duobaths™ two lids are provided. It is important to use the lid especially where extended times are used as this will reduce water evaporation and maintain an accurate temperature especially above 60°C.

Shelves

In the case of unstirred baths, the supplied shelves are perforated to aid convection of heat

throughout the bath. Stirred water baths, however, have an unperforated shelf. They are designed such that the water will be forced by the propeller to run under the shelf, and then across the top of it, producing a circular flow.

The stirred bath shelf has a guard system to prevent food pouches from coming into contact with the heater and propeller.

Temperature control system

All baths in the range feature a highly accurate digital PID controller for adaptive temperature control. This means that the bath ‘self teaches’ in response to the contents of the bath and the heating medium being used (e.g. water or oil).

The bright digital display resolves to 0.1°C. To maintain accuracy we recommend that a lid be used. In use the heater light will pulse indicating that small amounts of energy are being supplied to the heater mats, once the bath is at set temperature.

Unheated tanks

Spare gastronorm tanks are available for use with the FL4CA portable immersion circulator. For example this will enable the controller to be removed from a 14 litre tank and placed on a 28 litre (1/1) tank when a larger throughput for service is required or for mis en place work where a larger chamber is desirable.

Stainless steel gastronorm tank

Accessory lids are available to use with FL4CA stirrer unit. The stainless steel lids have a cut away section where the stirrer unit sits and will suit 1/2, 2/3, 1/1 gastronorm containers.

They are also fitted with easy lifting orange handle.

Accessory Bi-fold Lids

Clifton Bi-fold lids will fit unstirred and compact water baths. They are designed for 14 litre, 28 litre and 56 litre baths. The clever design of the concertina lid means it can be pushed open to reveal the chamber and as the lid is attached to the bath, there is no need to find a place to put it when

Zig Zag dividers can be placed in a stirred water bath to divide the bath into sections in a similar way to the unstirred bath.

Baskets can be used in both unstirred and stirred water baths and are also designed to divide the bath into sections.

Partition dividers

Dividers are available for both unstirred and stirred baths. The bath partitions, designed for the unstirred bath, are available in two sizes and fit onto the perforated tray to allow the bath chamber to be subdivided to create separate ‘mini’ chambers for individual menu items. The longer P470 divider is suitable for LF28D and FL56D water bath.
