Organic and biodynamic are very similar; both are grown without chemicals and GMOs.

However, biodynamic goes one step further. While organic agriculture will focus on replacing chemicals by natural products, Biodynamic will use preparations to nurture the soil that will help the plant produce its own energizing forces.

By increasing bacteria life in the soil, the winemaker provides the best possible environment for the plant to strengthen its vital energy which is one of the most important feature in a wine, not the alcohol degree.

Surgiva comes exclusively in glass bottles. Its has quickly become synonymous with the elite as an exclusive tasting mineral water. It is king in top class restaurants in Italy and now Worldwide. The name comes from the immaculate peaks of the Adamello Brenta Nature Reserve in the heart of Trentino, where it pours pristinely from a high altitude spring, close to Madonna di Campiglio. • The French consume 60 litres of wine per year which is more than any other country in the world. • A third of all French wine produced is exported - is worth more than 10 billion euros a year and is increasing especially from Asian (including Australia) demand.

• Wine has been produced in France since about 600 BC when Greeks from Phocaea founded Massallia (today known as Marseille) and introduced winemaking.

Domaine Marc Kreydenweiss

was established in Alsace, in

1650 and has been in the same family for thirteen generations — more than three and a half centries.

In 1971, at age 23, Marc Kreydenweiss took over the family winery. Among his first innovations were a switch to organic farming and yield reduction through extensive pruning. Most importantly, in 1984, he began focusing on planting specific varietals matched to specific terroirs to capture the truest expression of

Over the years, Marc’s love for the soil grew into a love for the earth, and he began to champion the well-being of the planet and preservation of its natural resources. He found himself drawn to biodynamic viticulture, and the domaine began embracing biodynamic practices in 1989. By 1990, Marc had converted the estate to 100% biodynamic farming, a distinction shared by a small group of wineries worldwide. With biodynamics, the grapes are organically cultivated, without pesticides or commercial fertilizers, and vineyard work is timed to the cycles of the sun, moon and stars. The vines are pruned very short to control yields and are cleaned of all extra shoots to allow good aeration and exposure to the sun. Pruning also ensures even spacing of grape bunches on each vine.

- Built in 1825 over the ruins of a

former wind-mill, By’s lighthouse became the guardian angel of the fishermen and sailors sailing in the dark or in the fog on the estuary. It stands on a hillock, 300 meters away from the Gironde and 15 meters above the water level.

Among the significant owners of that vineyard were Pierre Tizon,the seigneur of the fief, then the Comte de Grammont, M. de Lignac and his son-in-law, M. Rubichon who built today’s Château La Tour de By.

At the beginning of the XXth century, M. Julien Damoy, a successful delicatessen-grocer in Paris, bought this wine-estate which he used to visit very regularly. His son-in-law, Mr Chaumont, Burgundian by birth, then gets in charge of the vineyard until he sold it in 1961 to M. Kaskoreff, a member of Parliament. Four years later, a handful of men repatriated from North Africa, MM, Lapalu, Cailloux and Pagès, looking for an attractive – in potential and price – estate, discovered La Tour de By and acquired it. They then regenerated this estate of the northern Medoc until 1999, when Marc Pages, an agricultural engineer from Tunis, and his children, became its owner. Over fourty years, this former pupil of the Ecole Coloniale of Agriculture in Tunis, drove this Cru Bourgeois into the very exclusive Union des Grands Crus.

Clos Manou

- Nothing but perfection could be their motto: Stephane and Francoise Dief have been producing since 1998 a sophisticated and intense wine, close to their cellars in Saint Christoly Medoc. They make high octane Médocs, working at the same caliber as those who tend classified crus.

The Diefs built their domaine over time, gradually acquiring parcels of

vines in the region of Saint Christoly, particularly those located on gravel and those capable of high density plantings. The vines are meticulously maintained in order to produce low yields of super-healthy berries. The harvest is manual and the grapes are sorted and destemmed by hand.

Clos Manou is a selection of the best juice from one third of the property, and its élevage is done in new barrels. Cabernet Sauvignon makes up roughly half of the vineyard’s 13 hectares; the other 40% is Merlot, with 10% of Petit Verdot and Cabernet Franc.

Beau Mayne

- At one time, it was necessary to wait again several years to taste Bordeaux wines in good conditions. Dourthe created Beau Mayne in 1979, a round, nicely-balanced Bordeaux with the emphasis on lovely ripe fruit. Beau Mayne is the result of an increasingly strict selection process conducted by our oenologists who all have perfect knowledge of the Bordeaux terroirs.

From several hundred batches, only the best are selected, those whose supple tannins and rich fruit render them worthy of a place in the Beau Mayne cuvée. The blend then made to strike the right balance between rich, complex fruit and particularly mellow tannins before the wine is matured in vats and then bottles to put the finishing touch to it.

has a distinctive style and a strong personality, largely as a result of the global approach that no other negociant had dared to undertake until this point. Dourthe’s involvement at each step of its creation is truly pioneering.

Created in 1988 from the unison of Dourthe and its most skilled partner winemakers and grape growers, Dourthe N°1 has rapidly carved its niche as a shining example of great Bordeaux wine.

Examples of English horse armour dating back to the 14th century discovered near the ruins of the tower that is still visible today in the heart of the vines, bear witness to the history of this noble estate.

Viticulture developed in the 18th century and the Château was constantly featured as one of the region most prominent wine estates in the famous Féret wine guide, since its third edition in 1874, it was known at the time as Château de La Tour and remained such until 2002.

- Patrick Jestin (CEO of Dourthe) Situated at the extremities of the St-Julien appellation, separated from its neighbour Château Lagrange by only a stream, Château Belgrave is one of the oldest Cru vineyards in the Médoc. In 1855 it was classified as a 5th growth because of the exceptional quality of its deep gravel soils.

The soils at Château Belgrave show remarkable diversity. Two hillocks made up of gravel and pebbles deposited thousands of years ago by the Garonne river, overlying a bed of clay, rise to 23 and 26 metres. This type of soil is favourable to late-ripening grape varieties such as Cabernet Sauvignon, Cabernet Franc and also Petit-Verdot, which now covers 3% of the surface area following remodelling of the vineyard. The gravel thins towards the foot of the hillocks, where the soil is a combination of gravel and sand offering good drainage, and clay outcrops, which are particularly adapted to the cultivation of Merlot.

to renovating this little gem of a property in Saint-Estephe and restoring it to its former glory. Located on a magnificent terroir, right next to the Gironde estuary and overlooked by a majestic residence, with its rich and ancient history, the Château Le Boscq vineyards today produce highly distinctive wines, which elegantly combine the powerful character of Saint-Estèphe with extraordinary finesse.”

- Patrick Jestin (CEO of Dourthe) Château Le Boscq’s reputation dates back to the conquest for the Medoc vineyard, when in 1749, Thomas Barton took over the tenancy at Château Le Boscq. For more than 30 years he dedicated his life to making wine of a quality repeatedly

recognised, sometimes even at Cru Classé level, within the different classifications established in the 18th century by the courtiers and négociants in Bordeaux.

At the end of the 19th century, Jean Grazilhon, whose grandfather was the estate’s steward working under Thomas Barton, become owner of the estate. He had the chateau built in 1891, a majestic residence enjoying views overlooking the Gironde estuary. For more than 30 years, he strived to produce high quality wines, paving the way for Château Le Boscq to be awarded Cru Bourgeois status in 1932.

While vines have always played an important role in Dourthe’s history, our real foray in viticulture began in 1979, when we took over Château Belgrave. Activity intensified in the early 90s with the further addition of Château La Garde, followed by Château le Boscq in 1995 and Château Grand Barrail Lamarzelle Figeac in 2005. In addition to these four major properties, Vignobles Dourthe currently comprises nine châteaux in Bordeaux. Over the course of time, we have acquired an increasingly in-depth knowledge of the terroir on each estate, and our research has highlighted a number of extremely high quality plots, capable of producing exceptional wines.

From the nine estates which make up the Dourthe vineyards in Bordeaux, four prestigious châteaux located within Bordeaux’s most iconic terroirs also play their part in the creation of Essence de Dourthe.

seduced by the exceptional quality of the terroir, which is quite possibly one of the finest gravel outcrops in the Pessac-Léognan appellation.

The cross featuring on the wine label is a reference to Saint-Emilion’s religious background. This medieval town founded by a monk in the 7th century is famous for its monuments constructed over the centuries by various religious orders. The cross also symbolises the property’s complex history. Known at the end of the 19th century as Château Lamarzelle Figeac, the estate was rebuilt entirely in 1895, by a manufacturer from the North of France, a certain Mr. Bouchard.

The chateau is the fusion of the ancient small holdings of Clos Lamarzelle Grand Barrail and Lamarzelle-Figeac, which were separated from Château Figeac in the second half of the 19th century. The adjacent estate of Clos Lamarzelle was integrated in 1906. From the earliest records of the famous Feret wine guide, the estate was regarded as one of the finest wines in Saint-Emilion, and was included in the Saint-Emilion classification system between 1959 and 1996. The Carrere family, who succeeded Mr. Bouchard, the owner at the time, awarded the wines the motto “To taste me is to love me, and me alone”.

is located in the illustrious Saint-Emilion region of Bordeaux, just a stone’s throw from Cheval Blanc. Yet, it takes more than terroir to make a legendary wine. The estate was neglected and in 1986, Jean Faure lost its Grand Cru Classé status.

Since 2004, Olivier Decelle has worked his magic yet again as his vision and philosophy of natural farming has brought Jean Faure to the level expected of a top-tier Saint-Emilion estate. In 2012 his achievements were officially recognised when Grand Cru Classé status was restored to Château Jean Faure.

Decelle (the same man who transformed the historic Mas Amiel in Perpignan into one of the most innovative wineries in the south of France) has assembled an impressive team, both in the fields and in the cellar. Crops are thinned, harvested by hand and sorted by not one but two triage tables; whole-cluster vinification is natural and as gentle as possible.

The estate’s blend — a combination of Cabernet Franc, Merlot and Malbec — captures the nobility of the great St.-Emilion estates while expressing a lush, seductive quality found in the finest Pomerols.

Château L’Ermitage

have their origins in a property created in 1850 by an Italian family. Acquired in 1953 by the Thomas’ Family, the three successive generations have developed the domain to get today’s 28 ha of vines in Listrac-Médoc appellation. They own two magnificent properties, Château Reverdi and Château L’Ermitage. The Thomas’ family perceived the great potential of the grape, Petit Verdot. This grape has attracted full attention of the family. Its part in the blend is between 10% to 25% in addition to the traditional following grapes, Merlot and Cabernet Sauvignon.

The respect of the terroir facilitates the achievement of the winemaking process to obtain unique and well structured red wine. Indeed, all daily cares bring to the family vineyards allow a balanced production which represents the Listrac-Médoc appellation.

- Olivier Decelle was made famous in the wine world for building one of the most visible and appreciated brands of Roussillon wines, Mas Amiel and also for bringing back life to Chateau Jean Faure, the neighbour to Cheval Blanc in St Emilion.

Pierre-Jean Villa, is the man who helped develop les Vins de Vienne’s – a boutique rhône négociant- reputation around the world. He’s also a young but gifted winemaker in the northern Rhône.

When Olivier Decelle met Pierre-Jean Villa, they immediately understood that they were on the same wave length. As a result, they decided to fulfil their lifelong dream together – that of producing subtle pinots noirs and chardonnays in Burgundy. They joined forces and acquired 3 hectares of vines and also decided to select grapes from the best parcels throughout the region. The duo then set up their cellar in the village of Nuits-Saint-Georges.

- The Chevalier’s Estate,

was first created by Emile Dubois in 1850, and received great awards back in those days from the ”Concours Agricoles” and the “Exposition Universelle”. Marcelle Dubois, his daughter, and his Son-in-Law Emile Chevalier inherited the estate just after the First World War and took full responsibility.

Conscientious and meticulous, Emile Chevalier, just after the difficult years of phylloxera crisis, spent years of hard work perfecting the quality of the vines in the farm , and his son Georges, with his paternal experience, took succession and began to enlarge and valorize the Estate, first by establishing the planting of three hectares in Gamay.

Georges Chevalier learned quickly, not only by the love of his work, but with his serious dedication to make remarkable wines. In 1959, he decided to bottle totally all the harvests. The result was that since 1969, all wines sold to his customers were sold in bottles. In 1975, when Claude, son of Georges, joined the family business, he also continued to expand the estate by adding a further eleven hectares.

This 23 hectare domaine based in Gevrey-Chambertin was for many years a prime destination for the best négociant houses, who were looking to buy top drawer wine from prestigious appellations (Maison Leroy were a regular customer for the Mazis-Chambertin).

Selling off the production in barrel ended in the 1990s, and since Didier Chevillon took over the reins in 1999 almost everything has been domaine bottled and sold under their own label.

The style of the wines is a delicate combination of purity of fruit and expression of terroir. The preference is for elegance rather than power, although the wines still have excellent mouthfeel and are very expressive. The fruit is always destemmed, prolonged cold-soaking takes place and indigenous yeasts are used in an attempt to reflect the character of each individual terroir. It seems to be working, as the critics have raved about Dupont-Tisserandot over the last few vintages, with Wine Spectator scoring the 2002 Charmes-Chambertin a massive 98 points!

- Champagne CHAPUY is a Family Estate of 8

ha of vineyards . The majority of them are planted in the “Côte des Blancs” with Chardonnay grape variety, which allows to produce a fine and light Blanc de Blancs Champagne, very typical of this region.

Among them, 3 ha belong to the famous “Grand Cru” village of Oger. Other family plots, located in the “Coteaux Sud d’Epernay” and planted with Pinot Noir and Pinot Meunier grape varieties (3ha), are used to produce the blended Champagnes, more fruity and mellow.

CHAPUY Family is inextricably linked with Oger’s history because one of its ancestors was mayor of the village just after the French Revolution. is a small family winery in the town of Oeuilly

on the left bank of the Marne. Jean-Mary Tarlant and his son Benoît continue a family tradition that dates back to 1687. Currently the Estate is directed by the twelfth generation, represented by Benoît and Melanie, children of Jean-Mary Tarlant, who is chairman.

Today they are among the most innovative of growers, maturing most of their base wines in oak barrels and producing some fascinating light dosage champagnes including a Zero. Benoît is the winemaker and advocates a natural approach to viticulture (using herbal infusions in the vineyard) and winemaking. - After founding the domaine in 1993, which he

named after his grandfather, Didier Barral decided fairly quickly that biodynamic practices were the best choice for farming his vineyards. Deep in the heart of the Languedoc, in the Faugères appellation just outside the hamlet of Lenthéric, Domaine Léon Barral is a beacon of revolutionary winegrowing.

Didier farms thirty hectares of vineyards, and this is no small feat. Incorporating biodynamic practices into a vineyard means working the soil rigorously, and with so much land to farm, it is fortunate that he has so much help. His workers of choice? A team of twenty cows, horses, and pigs that graze the cover crops in and around the vineyards. The simple act of grazing cultivates healthy microbiotic activity in the soil, bringing mushrooms, ants, ladybugs, earthworms, and other essential life forms, which add important nutrients while aerating the soil. This is the concept of sustainability at its finest, where the ecosystem creates interdependence between the animals and the vineyards.

is run by Marc Valette, a young vigneron

who made his first vintage in 1992. Marc’s passion for his wine grew, and in 1998 he invested a considerable amount of money in building his own winery and cellar, equipped with stainless steel for fermentation on the upper level, the wine being run to the lower barrel cellar by gravity. In the meantime, the domaine has grown in size to 18 hectares on argilo-calcaire soil just outside the village of Cessenon.

Practices at Domaine Canet Valette lean toward the artisanal. The carefully tended Carignan, Cinsaut, Grenache, Syrah and Mourvèdre are picked later than other producers, with yields between 18 and 30 Hl/Ha. They are fermented with extended cuvaison, sometimes for months, and with repeated pigeage, and it’s not unknown for a bare-skinned Valette to jump into the vat and achieve this with his own foot. The style is one of maximum flavor, extraction, concentration and tannin, and the wines are bottled unfiltered and unfined.

Corbieres

Château Ollieux Romanis

- Located in Boutenac, just south of

the village of Corbières in the Languedoc region, Ollieux Romanis is now one of the largest privately owned wineries in Corbières, spanning some 130 hectares.

First planted to vine in the 11th century AD, Ollieux Romanis actually came into existence as a farm producing grains, olives, and mutton in Roman times, some eight centuries earlier. It was the Durban-Latreille family who saw its potential and began planting it to vine.

Through the Middle Ages, Les Ollieux became part of the Abbey of Fontfroide and then subsequently changed hands many times. Today it is owned and maintained by the Bories family, who settled at Les Ollieux some 200 years ago. Pierre Bories is assisted by winemaker Jean-Pierre Amiques. There are some very interesting and unusual terroirs featured at the domaine, including Mediterranean red clay, sandstone, and puddingstone.

Les Ollieux is currently working its way to fully-organic status having dispensed with herbicides and pesticides in the late 1990’s.

Domaine Alain Cailbourdin

was created in 1980 by Alain

Cailbourdin and today it is comprised of 20 hectares (approximately 40 acres) of vines planted in some of the best Pouilly-Fumé slopes. About half of the vines are “vieilles vignes” or old vines; the other half are vines planted since 1980.

Grapes grown on the different slopes are vinified separately, thus permitting the production of four different cuvees, each representing a distinctive terroir and aromatic expression. Their constant concern for quality is evident throughout the entire winemaking process, from the vineyard to the cellar. Their guiding principle is to bring forth the quality and diversity of the terroir.

A wine can only be great if it has the mineral support of a quality terroir. The art of the winemaking profession consists of giving the grapes all the possible chances to reveal their qualities.

Domaine Alphonse Mellot

- In 2013, this historic estate celebrates its

500th anniversary – 19 successive generations of winegrowers in the Mellot family. Today Alphonse Jr. is in total charge, having taken over the reigns from his father Alphonse Sr. fully five years ago.

The property, known as La Moussiere, is now at the height of quality for white wines world-wide. All farming is organic and certified biodynamic, with an elite team in the vineyards focused on low yields and ideal ripeness.

Their Sauvignons have acquired a rare precision and each parcel is well-defined, perhaps even more so with the reds. This fascination for Pinot Noir has led Alphonse, together with Vincent Geantet (of Geantet-Pansiot in Gevrey-Chambertin), to re-establish a medieval vineyard, known as Les Penitents, on the other side of the Loire River, just south of Pouilly-Fume.

Domaine Catherine et Pierre Breton

- The Bretons farm eleven

hectares of vines just east of Bourgueil in the village of Restigné. They produce Chinon and Bourgueil, as well as a bit of Vouvray, creating honest wines for both early consumption and longer aging.

The Bretons first introduced biodynamic practices into their viticulture in 1994, just after receiving their organic certification in 1991. Recently, they started the

three-year process of seeking biodynamic certification. In fact, they have become international icons for the natural wine movement in an area where the climate and soil can make organic viticulture difficult.

The Bretons farm vineyards on varied soil types, including gravel, limestone, clay, schist, and yellow tuffeau. Their wines are made primarily from Cabernet Franc (known in the Loire, curiously, as “Breton”) with small quantities of Chenin Blanc for their Vouvray. Though Pierre is the principal cellar master, Catherine makes a series of cuvées under the label “La Dilettante,” or the Dabbler. Together, they divide their wines into three categories: Natural Wines (for easy consumption), Classic Wines (that represent the typicity of the appellations), and Wines of Terroir (vinified individually by parcel).

Domaine Yves Cuilleron

- Yves Cuilleron is something of a

Rhône winemaking legend. He is described by Wine Spectator as “the leader of Condrieu’s new generation of winemakers.” Yves represents the 4th generation of Cuilleron vignerons although he initially was studying mechanical engineering at university.

The Cuilleron family Domaine, located in the hamlet of Verlieu (part of the town of Chavanay), was founded several generations ago in 1920. Yves Cuilleron’s grandfather was the first to bottle wine for commercial purposes in 1947. Yves assumed full ownership and direction of the domaine in 1987 and, since that time, has built an entirely new facility while at the same time acquiring additional vineyards. The domaine is now (as of 2012) significantly larger in scope with 52 hectares of vineyards that cover multiple appellations, including principally, Condrieu, Saint Joseph Rouge and Blanc, Cote Rotie, Saint Péray and a series of Vin de Pays from the Collines Rhodaniennes.

Domaine Les Cailloux - André Brunel

- The Brunel

Estate of Les Cailloux at Chemin du Bois de la Ville was established in 1919 and is named after the famous galet roulés (large stones) found in the vineyards of Châteauneuf. The Brunel family has lived in the area since the 18th century, although André’s grandfather was the first in the family to turn his hand to winemaking and the tradition has continued since. André joined his father in 1971 and during his career as a Vigneron has turned Les Cailloux into a world-class domaine.

The Estate today covers 80 hectares, with vineyard holdings throughout the southern Rhône valley. The Côtes-du-Rhône Blanc is produced from grapes grown in the Becassonne vineyard, which is located in Sorgues, 6km south of Châteauneuf du Pape. The Vaucluse vineyard is located on the banks of the river Aigues on the famous ‘Plan de Dieu’ terroir between Orange & Vaison, boasting vines of 30-40 years old. The Sommelongue vineyard is just north of Orange and some 10km north of Châteauneuf du Pape. The famous Les Cailloux vineyard stretches 18 hectares in AOC Châteauneuf-du-Pape.

This production reflects the philosophy of Domaine Marc Kreydenweiss; consumers will certainly find in these wines “l’âme de la terre” or “soul of the earth”.

is situated in the Haut Var area (northern part of the Var), characterized by a continental climate. This area’s cool evenings ensure slow and optimal grape ripening. Their Rosé wines mature late and are well-structured with plenty of body.

Measuring 290 acres, Château de Berne’s vine plots are set on a chalky terroir. They are mainly South-facing and sheltered by 1,500 acres of forests. This varied soil and climate offers optimal growing conditions for a wide variety of grapes, 10 of which are regularly used to make the Château wines: Syrah, Grenache, Cinsault, Sémillon, Ugni-Blanc, Viognier, Cabernet, Carignan, Rolle and Mourvèdre.

- Known since the 12th century as the

winery of “Château de Bridoire”, Château “Tour des Gendres” (literally “Tower of the sons in law”) is located on the site of an old Gallo-Roman villa. Luc and Martine de Conti bought the property in 1981. Owned and run for the past 3 generations by the “De Conti” family, Chateau “Tour des Gendres” is the flagship of the Bergerac appellation.

The De Conti’s have 52 hectares, all in Bergerac, all organically farmed since 1994, AGROCERT certified since 2005. Yeilds are managed based on grape varieties, soil, vintages, the style and balance of the wines and their agricultural plots. average yield: 5-6 bunches per vine. Vinification techniques are customized to reflect the true vintage expression.

Domaine Cosse Maisonneuve

- Created in 1999, Domaine

Cosse Maisonneuve is the result of the association of two talented oenologists and winemakers: Matthieu Cosse and Catherine Maisonneuve.

Both took over a 5 hectares estate in Prayssac near Cahors which was planted with old vines of Malbec (also known under the name of “cot”) and started making wines, well determined to produce genuine wines. Their very first vintage was the cuvées Les Laquets.

Since the Domaine has grown to approximately 15 hectares. Matthieu and Catherine produce separate “Cuvées” to reflect the identity of the different terroirs of the estate.
