warning
:
When operating, portions of your fire outdoor pizza oven get hot enough to cause
severe burns. Never leave children or pets unattended when oven is in use and never allow anyone
to sit or stand on oven. Also do not try and remove any portion of the oven, including the hood,
when oven is on or while it is cooling down.
note
:
The fire outdoor pizza oven produces intense heat. If not properly installed or operated,
the risk of accidents or potential injuries is increased. Please use extreme caution and carefully
follow all instructions, including the following:
To reduce the risk of damage to the oven or injury to yourself, please read this Manual thoroughly. Properly install the oven based on the instructions provided. Do not repair or replace any part of the fire oven yourself unless it is specifically recommended in this Owners Manual. All other service must be carried out by a qualified gas technician.
Children should never operate the Fire oven and always stay at an appropriate distance when oven is in use. Never place items in or around the oven that are of interest to children.
Never place unopened food containers in the Fire oven since the build up of pressure from the heat may cause the container to burst.
Never lean on any part of the fire oven when oven is in use or not in use. Make sure to pay special attention when you are lighting the oven and be aware of which burner you are attempting to light. Always be sure you are pushing the ignition button on side of oven when you attempt to light each burner.
Always light the oven with the doors open to be able to get a clear view of the flames. While you can preheat the oven with the doors closed, always be cautious of the areas surrounding the handles inclusing the glass. These areas can become very hot.
The oven exterior and interior areas become extremely hot and can cause severe burns. When the burners are on or the oven is still hot, never touch the cooking deck, any part of the oven’s interior or any surface near the front of the fire oven, including the doors. Also be cautious of the roof of the oven, especially near the vent at the back of the roof, since these exterior areas become the most hot during operation.
Do not use any type of cleaner, including water, on a hot fire oven. Never use any liquids directly on the cooking deck when cleaning.
Palce both knobs in the OFF position and allow the oven to fully cool before using any aerosol cleaner on it or near it. The chemical used for aerosol propellant could ignite in the presence of heat. Remember to never use cleaner on the ceramic cooking deck.
Always use dry pot holders when touching or removing hot items from the oven. Damp pot holders or gloves may cause steam burns. Never use a towels or cloths in place of pot holders. Pot holders should never touch hot portions of the fire oven or get near the open flame.
7
Owner’s Manual
Safe OperatiOn|
Only use the oven in a well ventilated area. Do not operate the fire oven under an unprotected combustible construction. The oven is for outdoor use only.
Do not obstruct any of the openings on the fire oven or obstruct the flow of combustion and ventilation air. Do not build the fire oven into any structure that is closer than 6 inches from the sides and back, and 12 inches from the top.
Keep all gas hoses away from any hot surfaces of the oven, internal or external. Keep all electrical cords away from the hot surfaces of the fire oven.
Have your fire oven installed by a qualified technician. Have the installer show you were the gas supply shut off valve is located and instruct you in its operation so that you can shut off the gas to the fire oven. If you smell gas, there could be a problem with the gas installation to the oven. If the gas connections are not perfectly sealed, you can have a small leak resulting in the faint smell of gas. If you think you may have a leak, close the gas supply shut off valve and call a qualified technician to locate and resolve the leak.

warning
The burning of gas cooking fuel generates some by-products
that are on the list of substances which are known by the state
of California to cause cancer or reproductive harm. California
law requires business to warn customers of potential
exposure to such substances. To minimize exposure to these
substances, always operate the fire oven according to this
use and care guide and ensure you provide good ventilation
when cooking with gas.
note
:
A liquid propane cylinder should never be “overfilled” beyond the cylinder filling capacity.
“Overfilling may create a dangerous condition. “Overfilled” tanks can build up excess pressure. The
standard safety device on tanks is the safety relief valve. This valve vents propane gas vapors to
relieve excess pressure. These vapors are combustible and can be ignited.

The flame should be predominantly orange and clearly visible at the back of the oven. There is a flame diffuser on the burner that creates a more visually appealing flame. It diffuses the gas coming out of the ports, making it so that there is one large flame instead of many small ones.
The inner cone should be approximately 3 inches high in average.
The outer cone should not touch the ceiling inside the fire oven. If the tips of the outer cone are making contact with the ceiling, the flames are too high.
The flame should be blue and stable with only a small amount of orange, if any. There should be little noise and no lifting.
The inner cone should be 1/4 inch high. The outer cone should be 5/8 inch high.

ONTINUEDIt is possible to adjust the air shutter from below without dismantling the unit. The air shutter is located directly behind the control valve for that burner.
Turn off the gas supply shutoff valve or close the main valve on the LP cylinder. Ensure the fire oven control knobs are in the OFF position.
Rotate and move that corner of the fire oven to extend no more than 6 inches over the edge of the counter top (Shown on page 22). Using a screwdriver loosen the lock screw(Page 24: B, F). Do not fully remove the lock screw.
Once loose, you can rotate the air shutter to adjust the amount of air entering the venturi. Visually inspect that the gas hose has not been stressed, dislodged or otherwise affected by moving the fire oven.
If it is safe to do so, and with the fire oven control knobs in the OFF position, turn on the gas supply valve or open the main valve on the LP cylinder. Light the burner using the lighting steps on page 18. ONLY LIGHT THE BURNER TO BE ADJUSTED.
Rotating the air shutter, adjust the amount of air entering the venturi.
For a lifting flame, slowly close the air shutter until the flame no longer lifts from the burner. For a sooty flame, slowly open the air shutter until the flame burns cleanly.
Once a stable flame that burns cleanly and does not lift is found, turn the fire oven control knob to the OFF position then tighten the lock screw. Re-light and confirm the adjustment is ok.
Turn the fire oven control knob to the OFF position. Turn off the gas supply shutoff valve or close the main valve on the LP cylinder.
Return the fire oven to its normal position on the counter top making sure that the gas hose has not been stressed, dislodged or affected by moving the fire oven during this process.

Turn the screw to adjust the flame height and make note of size and stability. Adjust to the lowest stable flame height.
Turn the burner OFF and replace the control knob on the valve stem.
Since you may have fluctuations in gas pressure, it might be necessary to adjust the LOW setting on one or both burner valves. If you adjust the LOW setting, verify that the burner stays lit. Your goal is to set it to the smallest size flame that is still stable.

preheating
You can preheat the oven with the doors closed but be cautious of how hot the areas surrounding the door handles may get. It is recommended to wear insulated gloves when opening and closing the doors while oven is in use. The Fire Oven is ready to cook in as little as 20 minutes, however, we recommend at least 45 minutes of preheating for optimum performance.

Crust formed to less than 1/8” thick Suggested Upper burner setting: HIGH Suggested Lower burner setting: LOW Cook for approximately 3 minutes Rotate pizza 3 to 4 times during cooking
TEMPERATURE RANGE
When the oven is fully pre-heated, with both burners on HIGH, the Fire Oven is capable of intense heat in excess of 1200ºF. The heat is most intense at the rear of the cooking deck and least intense at the front. Once you are familiar with cooking with your oven, you will be able to turn out perfect pizzas in no time. You should only cook thin crust pizzas with few toppings at the upper end of the temperature range. You can also buy specialty flour to avoid burning the dough.
When the upper burner is set to LOW and the lower burner is LOW or OFF, the oven cooks at a very low and slow speed. Temperatures can be as low as 300ºF.
