Happy New Year, Tennessee members. I first want to thank Elaine Miller for her service to Tennessee ICES and send my thoughts and prayers to her and her family. As you may have read in an earlier notice, family health issues have prevented Elaine from continuing at Tennessee’s Representative.
As one of the Tennessee Alternate Representatives, I will be completing her

All Tennessee ICESmembers are invited and encouraged to attend the Spring Day of Sharing where an election will be held for the following positions: Representative and two Alternate
Representatives for a two-year term and Newsletter Editor (to complete the remaining one year of Elaine’s unfinished term as Editor).
To date we have not received any nominations. If you want to nominate someone, please get their approval first, and then
term of office. We will be electing a new Represen-tative and two Alternates at the Spring Day of Sharing, and the newly elected Representative will take office after they are sworn in at the 2014 Convention in New Mexico.
So many of our members have offered their support, to me and Elaine, and I know we can continue to count on your support during this time of
transition. Although I have served in this position before, it’s been quite some time and lots of things have changed since then. Cards can be sent to Elaine at

Tennessee ICES is once again bringing some of the most popular sugar artists for hands-on-classes this spring. Sidney, Michelle and Mike Galpern will be here to teach you some of the latest techniques in working with chocolate and isomalt.
We have four classes on the schedule. There is a class for everyone. All classes are open to students of all skill levels.

On Saturday we’ll beworking with chocolate. We have two classes scheduled for the day that require a minimum of supplies.
There are two isomalt classes on Monday. The instructors will provide all of the supplies for these two classes.
Tennessee ICES classes are always fun and entertaining, and provide
the opportunity for hands-on assistance from some of the top sugar artists in the world.

Tidwell, will round out the day with a classic hands-on demhands-onstratihands-on of sugar eggs. These can be used for lots of holidays, not just Easter. If you want to make one of the sugar eggs please be sure you check the box on the registration form so we can be sure we have enough supplies for everyone who wants to participate.

Bylaws Article IV, Section 5A states:”… All members shall have the right of voting by proxy. A proxy may only be
assigned to a member in good standing of this organization.

Michelle Galpern is co-owner of Simi Cakes, mold maker, international instructor, manager, cake decorator, and sugar artist with a background in jewelry mold making with her father since she was 12 years old. She enjoys painting, sculpting, and photography and adapted her skills to the sugar art world when her daughter, Sidney, started her bakery. Michelle has taught mold making and cake decorating at Florida ICES Days of Sharing and cake shows, shops, and schools, as well as serving as assistant to Sidney, and judging at cake shows. She has written articles for the Edible Artists Network Magazine and Blog.
Mike Galpern is the director of sales, operations manager, baker, sugar artist, cake decorator and international cake instructor for Simi Cakes. Mike handles all of the wholesale account

Sidney Galpern is a Certified Professional Chocolatier, Cake
Designer, Sugar Artist, and International Instructor. She graduated with honors from the prestigious Ecole Chocolat School of the Chocolate Arts and has the distinction as the youngest student to ever complete the program. She trained and interned with top sugar artists and chefs in New York City, Orlando, and West Palm Beach. Her company was chosen for ABC's Extreme Makeover: Home Edition Space Coast. Sidney has been teaching and demonstrating sugar and cake decorating to professionals and amateurs for the last six (6) years at venues such as Keiser University, the Sugar Arts Institute, cake shows, ICES Convention and Days of Sharing, culinary schools, restaurants, The Festival of Chocolate, cake clubs and cake supply stores, and private classes. She has served as a judge and sponsored cake shows and is a member of the Icing Images Design Team. She designs and
manufactures her own line of sugar art tools, and her own brand of isomalt. She has written articles for American Cake Decorating Magazine, Edible Artists Network Magazine, CakeFu.com, SugarArtsInstitute.com and has been featured on About.com, in the Florida Today newspaper, Today in Brevard Television
Show and the ICES Newsletter. She released her first DVD for cake decorators in the fall of 2012. In her spare time Sidney likes to read and write fiction.
