Acme Bread Company
San Francisco
Ferry Building Marketplace One, Marketplace Shop #15, San Francisco, CA 94111 Tel: 415-288-2978
http://www.ferrybuildingmarketplace.com/acme_bread
The Marketplace is the only place in the Bay Area—other than Acme's original Berkeley location—that carries the full selection of Acme's nationally acclaimed artisan breads. Steve Sullivan, founder and owner, says that after all these years Acme's foremost goal remains the same— to bake outstanding bread.
Acme uses only organic flour and works closely with farmers in evaluating and selecting the grain varieties for its flour each year. Three shifts of bakers work around the clock, seven days a week at the Berkeley bakery in order to meet customer demand. At the Ferry Building Marketplace, breads are baked fresh throughout the day in the hearth oven.
Sullivan became interested in baking bread 25 years ago as a busboy at Berkeley's famous Chez Panisse restaurant where he worked while attending the University of California at Berkeley. He started baking bread as a serious hobby after being inspired by Elizabeth David's cookbook "English Bread and Yeast Cookery." At Alice Waters' request he went on to bake bread in the Chez Panisse kitchen. In 1983 he and his wife, Suzie, opened their first—now legendary—bakery.

Our gourmet tea cookies are simple. They have but three basic ingredients: flour, butter and sugar. It is our belief that great tea cookies start with great ingredients.
That is why we handcraft our tea cookies with all natural organic ingredients. Our flour is unbleached and made from a premium blend of organic hard red wheat. Our butter is European Style Organic Sweet Cream Butter with over 85% butterfat, made in a 1950's small batch butter churn. Our sugar is organic pure cane sugar - no beet sugar here.
In choosing our ingredient partners, we seek companies with an artisan approach, each striving to create the purest products possible.
We also believe that you appreciate unique flavors and have an adventurous and educated palate. That is why we carefully select the most aromatic culinary herbs and spices. We use the actual herb or spice, not a tincture or flavoring. The actual leaves, flowers, stems or seeds are incorporated into our dough using our proprietary method.

On scenic coastal Highway 1, Pt. Reyes Station sits at the southern end of Tomales Bay and at the entrance to Pt. Reyes National Seashore. Competing with all the natural beauty is the smell of
freshly baked bear claws, gooey morning buns and sourdough rolls—just a few of the reasons it's as likely to meet someone munching on one of the Bovine Bakery's pastries who is from San Francisco as from around the corner. (When people ride their bicycles 30 miles to eat a pastry, you know it's good.)
california guide: bakers
For Bridget Devlin it all fell into place. Certainly there were challenges and some days were better than others, but the whole plan seemed to have a logical inevitability about it. And now, “I'm doing something I love,” she smiles.
She, her husband and their son were living in Monterey, when the opportunity came for him to join the Hog Island Oyster Company in Tomales. The whole family took to the move like ducks to water (which there is a lot of in this area). After settling in, Bridget's entrepreneurial instincts kicked in. She took a look at her new town and decided that it could use a bakery. She researched every aspect of the business, even apprenticing herself to Kelly Porter at Santa Cruz's Kelly's French Bakery. When she was ready she found the perfect location and the perfect people to work with her. They seem to think that she's made the perfect place for them too, because they stay for many years.
Bovine Bakery has grown with the town and adapted its selection of pastries to the local tastes. “We're delighted to have visitors, but the Pt. Reyes people are so important to us,” Bridget explains. “It fits this place perfectly. We always have at least two or three vegan pastries on offer. In another town we might not have those. This bakery could only be here.” And a lot of people are clearly glad it is.

[email protected] http://www.clairesquares.com/
Although Clairesquares officially opened for business in 2006, Claire has been making her
delectable treats since she was a child growing up in County Cork, Ireland. By the age of 12, she was baking from her mother's recipe books and experimenting with fudge, butterscotch, toffee and caramel. She found that the best result was a mouthwatering combination of shortbread, caramel and chocolate.
A young entrepreneur, Claire tried her hand at selling the squares at school. It wasn't long before her classmates were addicted and she was selling out every week. Over the years, Claire continued to bake her famous squares, developing a following among family and friends in Ireland. Years later and miles away in San Francisco, she whipped up a batch of her buttery Irish treats for her friends. They had never tasted anything quite like them. Encouraged by her friends' enthusiasm—and constant harassment for just one more square—Claire decided to sell them again here in America, and Clairesquares was born!
Though our products may be sinful, Clairesquares is dedicated to being a socially responsible business. We operate out of a certified Green Business commercial kitchen and are licensed as a green business with the City and County of San Francisco. We are committed to an aggressive recycling and composting program, and we recycle 90% of our waste. Our online orders are shipped using recycled and biodegradable styrofoam, which ensures that your product arrives to you in perfect shape with minimal effect on the environment.

Since 1989 Mäni's Bakery has been satisfying discriminating palates and sweet-tooths with cakes, cookies, pastries and breads, baked from high quality, natural, less-refined ingredients. Then in the mid 1990s, following the same philosophy Mäni's began its restaurant as well.
It's the quality of the food and wholesome goodness of the ingredients that makes Mäni's a
destination for Angelenos: organic flour in all of our baking, a choice of sweeteners, including fruit juice reduction, granulated maple syrup, organic cane sugar, agave syrup and more. All of these ingredients let Mäni's serve up an array of tempting baked goods that are not overly processed. They bring out the product's true taste like our real chocolate sweetened with barley malt. The results are delicious, healthier versions of traditional foods for the health conscious connoisseur. Mäni's is famous for creating healthier versions of classic recipes. Our signature chili is hugely popular because of its great taste and full bodied flavors, yet it's key ingredient is turkey, which results in lower fat and cholesterol.
Mäni's brings to each menu item the commitment to use only the freshest ingredients, free of artificial additives, sweeteners or preservatives. We are also pleased to say we use no
hydrogenated fats in our freshly baked products, and in most cases replace them with organic alternatives.
Mäni's uncompromising commitment to wholesome food created from high-quality ingredients have resulted in our simple motto: Good food that's good for you!

Morell's Bread is a small artisan bakery and as I like to say, We are the bakery. From the beginning I wanted to be able to sustain a work model in which we bake as much bread as we can in the brick oven at HCA without resorting to artificial means to expand the business. My wife Tamsen works side by side with me in the bakery making the scones and helping with the scaling and shaping of the loaves. All of my loaves and baked goods are 100% organic using as many local ingredients as possible and are completely handcrafted.
n a concession to physical well being, we recently purchased a Diosna diving arm mixer to mix and knead the dough. It has a gentle folding motion that closely resembles the work we used to do by hand. Everything we produce is 100% naturally leavened using a whole grain sourdough culture that is about 10 years old. I feel that these factors produce bread that is unlike any other.
We offer some breads that are totally unique and much in demand: a 100% spelt bread, a 100% rye bread and a loaf made from and heirloom variety of wheat grown by Full Belly Farm. These breads offer an alternative to those who are sensitive to modern wheat, and are purchased enthusiastically by many customers who thought they had to give up bread.
We love what we do, we love our bread and we hope that you will as well. Eduardo Morell & Tamsen Fynn

Nabolom means "House of the Jaguar" in a Mayan Language of Southern Mexico. Jaguar is associated, in some indigenous mythologies, with the origin of fire. Fire transforms raw materials into cooked food. Symbolically, fire may also represent the mediation of nature and culture in human society. The name is borrowed from Gertrude de Blom's museum "Na-Bolom", in San Cristobal de las Casas, Chiapas Mexico.

Rustic Bakery was created to address the growing Artisan Cheese market in the United States. Seeing that there were no handmade Artisan crackers available to compliment the increasingly sophisticated cheeses being produced, the founders of Rustic Bakery decided to develop a line of organic flatbreads in 2005.
In January 2006, Rustic Bakery incorporated and with the help of its investment group, purchased and moved into its new location in Larkspur. The bakery has a 50 year history and was the site of the much beloved "Bread & Chocolate" bakery before. After completing renovation, the bakery opened its doors on March 3, 2006 to a warm response from the neighborhood.
Rustic Bakery flat breads are baked by hand with organic grains and seeds, using local ingredients whenever possible. The flat breads are all low in fat, high in fiber and full of nutrients making them naturally good for you.

The Yellow Deli
315 East Broadway, Vista, CA 92084 Tel: 760- 631-1888
http://yellowdeli.com/home-vista.html
Long ago in the old village of Vista an idea sprouted… Wouldn't it be nice to have a place in this unusually quiet and uncrowded part of Southern California for a pleasant place where we could meet friends and serve good food…
So, early in the year of 2003 this property was acquired on Broadway… an old one room dilapidated building stood next to the old Adobe offices. That little building was torn down and then began a very long process of learning for us. We got to know about building permits, architects, engineers, many fees, etc. Finally, after many trials and even more errors, we began building our Deli in 2008. From the ground up, our nice Deli building began to take shape. And after many more difficulties and many more fees, building permits, architects, and engineers, we finally finished the task. It took seven years all together. On Feb. 14, 2010 we opened our doors.
So, the nice idea is now a living reality: the Yellow Deli.
Some may say that we're dreamers, but we're not the only ones…
Even longer ago, and even farther away, the idea actually sprouted up of a society where people could work together and live together in peace and harmony. The “utopian” ideal of a society of complete sharing has come and gone across the face of history over the years, but few realize that
california guide: bakers
made of up Jewish believers in the Messiah) as they practiced complete communal living… this fact is documented clearly in the Bible. Somehow it must have appeared to them to be the perfect way to live out all the demands of Love, going the “extra mile”. So, why not live that way today?
That is a good question. It seemed to us like love demanded that kind of “together lifestyle”. So, for the last 40 years, we have been working together as a co-operative, raising our families together. Not until the early 2000's did we actually start a community here in Vista. Some of us are originally from this area and were very happy to become part of such a community right here. We support ourselves by organic farming (Morning Star Ranch Organic Avocado Ranch, Valley Center) and sell our produce at the various Farmers Markets in our area. The Deli is able to serve you fresh, organic, and local produce some of which comes from our own ranch. We also have woodshops where we work together, making nice doors and windows and cabinets (such as the ones you see in the Deli). We do high quality work and have two woodshops in Vista, (one on Mercantile, and one on, S. Santa Fe, Vista). And now we work together to run our little Deli built with great care by all of us together…
So, we have good organic food, nice craftsmanship, and a nice environment to eat a meal.. that is The Yellow Deli!
Our way of life is different and we do not mind one bit answering your questions. As Henry David Thoreau once wrote: “If a man does not keep peace with his companions, perhaps it is because he hears a different drummer. Let him step to the music which he hears, however measured or far away.”
We are just extremely happy to be here in Vista and to have actually, finally opened our doors. We hope your dining experience is pleasing and you can be sure, “We are here for you…”

Wild Flour Bread features organic sourdough breads, scones, biscotti and coffee drinks. Working with a wood fired brick oven we produce beautiful hard crust breads that our customers come from miles around to taste. At 8:30AM we open with 4 breads only, our sticky bun, cheese fougasse, goat flat bread and either the Bohemian (apricot, orange and pecan) or the Egyptian (pear, fig and
candied ginger) and 1 or 2 out of 4 or 5 daily kinds of our organic whipping cream scones which have become a daily sellout with flavors like apricot, white chocolate, ginger or double chocolate, espresso, hazelnut.
By 10:30 AM we usually have the remaining breads arrive by the hundreds (we make up to 900 loaves daily and sell only in our bakery!) and the remaining kinds of scones. Generally we have 10 to 12 kinds of bread daily. Each day the variety of breads changes. Like wine tasting we sample all of our breads so that you can experience a huge variety of tastes and its fun!
We are located in beautiful Freestone Valley 5 miles west of Sebastopol Ca. in a village of just 26 houses. The view from the bakery windows looks out on to fields, barns and often a herd of cows.
