CHAMPAGNES

The name of Champagne is limited not only to a defined area but to a process through which every drop of wine must go before it can claim the name.

A good Champagne must have a combination of freshness, delicacy, richness and raciness , and a gently stimulating power, which no other wine has ever quite attained.

The chief difference between the brands of Champagne lies in the making of the Cuvee.

Irroy, Krug, Bollinger are the best examples of the old style making full -flavored, mature tasting Champagnes.

Another fashion is to make a super -luxury wine,relegating (in theory) even the best vintages to second place. Dom Ruinart, Heidsieck Diaman t Blue,Dom Perignon, Roederer Crystal and Comtes de Champagne Taittinger are all in this bracket.

WHITES FROM FRANCE COTE DE BEAUNE

The very name of Burgundy has a ring of richness about it.

Let Paris be France's head. Champagne her soul, there is no doubt about what Burgundy is, her stomach. It is the most famous of the ancient duchies of France. But long before either,even before Christianity came to France, it was famous for its wine . The consumer should remember to make the distinction between the name of the vineyard and of a commune.

The difference between a Chevalier Montrachet, from one famous vineyard, and a Chassagne Montrachet, from anywhere in a big commune, is not obvious, but it is vital.

North, on the border of Puligny, there is the best white wine Burgundy, if not the world.

The Grand Cru Montrachet earns its fame by an almost unbelievable concentration of the qualities of white burgundy. It has more scent, a bright gold, a longer flavour, more succulence and yet more definition, everything about is intensified - the mark of truly great wine. The oth er Grand Crus grouped about it come near but rarely excel it. Chevalier Montrachet tends to be more delicate, coming from ground so strong that tilling it is barely worthwhile: its good soil is even used for renewing Le Montrachet.

Batard lies on richer ground and often, not always, fails to achieve the same finesse. Les Premier Crus Puligny, Les Cailleret et Les Folatieres very often belong in the same c lass.

There is a distinction between Puligny Montrachet and Meursault, quite clear in the minds of people who know them well, but almost impossible to define.

Meursault is, to attempt the impossible, a sli ghtly, softer, drier, less fruity wine than Puligny Montrachet. The words "nutty" and "mealy" are used of it, whereas Puligny is more a matter of apricots and peaches.

The other appellation Grand C ru the Corton Charlemagne is a magnificent dry, forceful lingering, elegant wine, among Burgundy's very best.

CHABLIS

Sleepy little Chablis on its reedy river in that valley does not look the part of the world's most famous wine town.

There is not a hoarding, not an illumination, not a whisper;of the fact that round the world, everyday, as much wine is drunk under its name as it often produce in a whole harvest.

While every wine producing country of the new world, and several of the old has appropriated the name for any dry (or even sweet) white or even pink wine, real Chablis continues to be produced in limited quantities, with real distinction. So distinctive, is it, in fact, that is not everybody's taste. Chablis sends one rummaging for descriptive phrases even more desperately than most wines.

There is something there one can so nearly put a finger on. It is hard but not harsh , reminds one of stones and minerals, but at the same time of green hay; actually, when it is young,looks green, which many wines are supposed to.

Grand Cru Chablis tastes important, strong, almost immortal. And indeed, it does last a remarkably long time; a strange and delicious sort of sour taste enters into it at ten years or so and its golden green eye flashes meaningfully.

RHONE

THE LOIRE VALLEYS AND MUSCADET

Even if they are spread over 600 miles of France , with wide variations of climate, soil, tradition, and four or five different grape sorts, they have a real family likeness:they are light, grapy, appetizing and charming.

They divide clearly between the dry wines to the east (Sancerre and Pouilly) and the west (Muscadet) and the sweeter wines of Touraine and Anjou in the middle . The Valley of the Loire and the Valley of the Rhone are two sides of the same coin. Rhone wines range from the excellent and strong orange and pink rose of Tavel to the powerful soft fruit scent of the Chateauneuf DuPape to the collector's wines of Condrieu with the inner sanctum four acre estate of Chateau Grillet, the smallest vineyard with its own Appellation Controlee in France.

Grillet, produced by an unusual grape, the Viognier is a rather delicate,dry wine with a haunting floral scent like a faint and disturbing echo from Rhine and a very long, rather spicy aftertaste.

BORDEAUX AND SAUTERNES

Graves as a whole is known chiefly for its white wines; dry to medium sweet, pale yellow, with a peculiar, faintly chemical or metallic character, the best example is Chateau Carbonnieux.

Chateau Haut Brion, roughly 50% Sem illon, 50% Sauvignon Blanc has a very pronounced yellow color, honeyed Semillon, beautifully complex bouquet, dry with a good body and flavour, the great brother of the greatest red of the region.

The famous white wine of Sauternes is a specialty which finds its only real rival not in France at all but in Germany.

The Special technique used takes full advantage of the peculiar form of the mold (known as Botrytis Cinerea) which forms on the grapes, leaving the sugar and the flavouring elements in the juice more concentrated than ever. The result is wine with an intensity of taste and scent, and a smooth,almost oil like texture, which can be made no other way.

Chateau d'Yquem was made a First Great Growth - rank created for it alone in all Bordeaux in1855. It is a sublime, very sweet, rich textured, flower scented, glittering golden liquid. RED BORDEAUX ST. ESTEPHE

The Graves bank swhich give the Medoc and its wine their quality and character,stretching long the shore of the river Gironde. Sheltered from the ocean to the west of forest, begin to prefer out at St. Estephe.

It is the northern most of the four famous countries which are the heart of the Medoc.A litt le "jalle" divides it from Pauillac, sharing on the one hand, the vineyards of Chateau Lafite,on the other three classed growths of St. Estephe, namely Chateau Cos d' Estournel, Lafite -Rochet and Cos-labory.

The wines have more acidity, are fuller, solid, often have less perfume, but fairly fill your mouth with flavor.They are sturdy clarets which become with age, gentle but still vigorous, unfaded. Chateau Cos d' Estournel is the most spectacular of the classed growths.

RED BORDEAUX ST. JULIEN

No other commune in Bordeaux has so high a proportion of class ed growths as St. Julien.It is a small commune, with the smallest production of the famous four of the Medoc, but almost all of it is superlative wine growing land, typical dunes of gravel, not as deep as in Pauilla c but very close to the river and consequently well drained If Pauillac makes the most striking and brilliant wine of the Medoc, and Margaux the most refined and exquisite, St Julien forms the transition between the two, with one or two exceptions its Chateau make rather round and gentle wine, gentle, that is when it is mature, it starts as tough and tannic in a good year as any.

CHATEAU DUCRU BEAUCAILLOU

We recognize in this wine of scarlet colour the great qualities of one of the very first among the second classified growths. Its fine bouquet, its charm and its soft "body" are harmoniously balanced and give great satisfaction to the most advised connoisseurs.This wine can be drunk with nearly all dishes, except for too spicy sauces, which would hide its great quality.
