(9) Champagne Pol Roger Cuvee Sir Winston Churchill 1999
Sir Winston Churchill was Pol Roger's most illustrious devotee and customer. This champagne is made in his honour. The composition of the blend is a closely guarded family secret but from tasting it is likely that the champagne features about 70-80% Pinot Noir with the remainder made up from Chardonnay. The grapes are all from Grand Cru vineyards which were under vine during Churchill's lifetime and it is only ever made in the very best vintages. It is made in a style which Churchill himself favoured: robust, mature and long-lived.

The family has been vineyard owners since the 1570s. Didier owns 14 hectares of vines in the communes of Volnay, Pommard, Aloxe Corton, Meursault and the Haute Cote de Beaune. The famous 1er Cru “Clos des Chenes” vineyard of Volnay is 15 ha of vines and Didier can boast one of the best plots located right in the centre. The first principle that Didier adheres to in his
winemaking is that the majority of work is done in the vineyard. We hear this time and time again. However, the amount of manual labour that Didier performs in his vineyards is remarkable. Leaves are thinned by hand multiple times to remove those that shade the bunches. His canopy is trellised unusually high to counteract the severe lower thinning so that photosynthesis isn’t stunted. In the cellar he uses new oak sparingly. Didier’s main focus is to make wines that have very rich and precise aromatics as well as very pure fruit. A rarity on restaurant lists!
