APPLEWOOD GIN

Distilled from grape-based spirit from the Barossa Valley and composed of an eclectic collection of botanicals such as Juniper, Lavender, Saltbush, Peppermint Gumleaf, Blood Limes, Desert Limes, Lemon Myrtle, Anise Myrtle, Wild Thyme, Quandong and

Pepperberry. This is truly and uniquely an Australian gin.

OKAR ISLAND BITTER

Distilled from grape-based spirit from the Barossa Valley and composed of an eclectic collection of botanicals such as Juniper, Lavender, Saltbush, Peppermint Gumleaf, Blood Limes, Desert Limes, Lemon Myrtle, Anise Myrtle, Wild Thyme, Quandong and Pepperberry.

Applewood Gin uses only botanicals indigenous to Australia (aside from Junioer) which are sourced, whenever possible, from the indigenous people of Australia. This is truly and uniquely an Australian gin.

2020 JADE & JASPER FIANO

The wine that largely put Unico Zelo on the map, first released in 2014 – it has pioneered the grape variety in some of the harshest climates in Australia – showcasing the possibility of wines crafted in a pristine desert-like environment.

Textural and aromatic – a wine you can feel and taste. Primary flavors of pears, green apples and lemongrass. The jade & jasper name comes from two symbols of good luck and

prosperity.

Variety: 100% Fiano

Region: Riverland

Soil: Ancient Sandy Limestone

Alcohol: 11.5%

2020 FRESH A.F. NERO

If anywhere in the world could make the freshest, zippiest style of Red - you'd expect it to be in the middle of the desert. Hailing from some of the most ancient soils on earth - The Riverland is a complete underdog region that epitomizes what it is to craft fine wine on the edge. Rich red earth, sandy soils covering limestone.

Challenging, avant-garde - and one of the most exciting wines we've crafted to date. We’re intensely passionate about Nero d'Avola and it's clear potential in the warm, sun-drenched spots of Australia. The insane water-efficiency of this variety coupled with no additions in the vineyard or winery (save for a small component of SO2 at bottling) displays the

potential for this variety to craft succulent, juicy, aromatic and supremely refreshing wine. A touch of ancient vine Zibibbo lifts the aroma into supreme smashability.

Variety: 70% Nero d'Avola, 30% Zibbibo

2017 CHERRY FIELDS DOLCETTO

An upfront and confected nose of plums and cherries with a light exotic spice lending

definition to the intense aromatics. A structured weight with medium-bodied density and a cleansing acidity driving flavor across the palate. Some playful tannins that close out the wine as playful but serious.

Variety: 100% Dolcetto

Region: Polish Hill River, Clare Valley

Attraction: The attraction is 20-year-old Dolcetto vines grown in

an inland, continental climate – warm days and alarmingly cold

night lend great acid retention whilst developing flavor.

2017 TRUFFLE HOUND

This is Unico Zelo’s early released, approachable and jovial expression of Barbera & Nebbiolo - which aims to retain the higher aromatics, herbal savories for its amaro-like refreshment. For those that favor meaty, gaminess over bright plum-fruit. An exploration for umami-like refreshment.

It presents with a smoky, amaro-like liquorice and cardamom spice. Given drive by a lively and juicy pal- ate-weight and pucker with a bright yet savory finish.

Variety: 70% Barbera, 30% Nebbiolo

Region: Polish Hill River, Clare Valley

Alcohol: 13.6%

2019 ESOTERICO

This has become one of our most cult-followed wines since we began. It's not exactly white wine, nor red - many call it Orange or Amber wine...but we just call it Esoterico. No fining or filtration. Inspired by the most ancient wines known to man, Esoterico is a mixture of incense-like aromatics, astringent tannins, and a brilliant amber color. The perfect wine for those hard-to-match foods such as aged cheeses and spicy dishes.

Variety: 31% Fiano, 29% Zibbibo, 22% Moscato Giallo,

13% Gewurtztraminer, 5% Greco

Region: Riverland & Clare Valley

Winemaking: Completely unfiltered wine. Fermented

on skins for two weeks. Matured for a year in large

3000L casks.
