Los cambios en los hábitos de los consumidores han provocado mo- dificaciones en las tendencias de mercado. El lanzamiento de nuevos productos de panificación (horneados o bien parcialmente hornea- dos) ha sufrido un crecimiento exponencial en los últimos años. En Europa se ha producido el 40% del lanzamiento de nuevos productos, seguidos por Norteamérica con el 25%, y Asia y América Latina con el 16% de los lanzamiento cada una (Launois 2008). El consumo de productos saludables y naturales se está popularizando a nivel mun- dial a medida que los consumidores son conscientes de los benefi- cios de determinados ingredientes sobre la salud. El conjunto de productos de panificación fabricados con cereales enteros es el que ha experimentado un mayor crecimiento en los últimos 2 años; de hecho en Europa, de un total de 861 productos panarios lanzados al mercado, alrededor de 15% contiene cereales enteros. La tecnología del precocido ha hecho posible la diversificación de productos en

cuanto a tipos, forma y tamaño, en los puntos de distribución y dis- poner de pan fresco a cualquier hora del día.
